Quick recipes for uni student studying for final exams?!


Question: Quick recipes for uni student studying for final exams!?
I am a final year undergraduate studying obviously for final year exams, i now am planning to stay in uni for late hours e!.g!. til 12/1/2am studying and therefore do not attend to spend a great amount of time cooking and consequently cleaning!. Anyway can anyone suggest very quick nutritional meals that i can make and possible take with me to snack on at uni, i ask because i do not want to resort to ready-meals/frozen food/tinned food!. please help!Www@FoodAQ@Com

I'm afraid this may sound a little odd!.!.!.I don't normally gravitate toward uber-healthy foods, but this was often served as a snack at my son's preschool (!) and I developed a real taste for it! I always make some when I'm eating alone and don't really feel like cooking:

Take some bulgur wheat--I usually start with 1/2 cup unless I want extra to use later (which perhaps you do!) However much you're using, the ratio is 3 parts bulgur to 4 parts water!. Bring the water to a boil in a lidded saucepan!. Add a little butter or oil and a few pinches of salt!. When it boils, pour in the bulgur, stir, reduce heat to low, and cover!. Cook for 15 minutes!.

Take it off the heat, remove lid, and fluff with a fork!. Drizzle some tamari (or your favorite soy sauce) over to taste, and eat hot!.

Simple as that, and though it might not be exciting, it's substantial, nutritious and cheap!.!.!.and it's versatile:

--Keep any leftovers covered in the fridge for up to several days!. Eat them cold or microwave them!.

--You can pour the boiling water (same ratio) over the bulgur and just let it soak instead of cooking it!. The grains stay a bit more separate that way, and if you add some lemon juice, olive oil, chopped tomato, chopped cucumber, chopped parsley and/or mint, you've got a nice fresh-tasting tabbouleh that keeps very well for several days and that tastes good hot or cold!. Obviously you wouldn't want to add tamari to this!

--You can stir anything else you fancy into it--leftover cooked chicken, chickpeas, and leftover steamed broccoli are my favorite!. I always add tamari to this one, and sometimes a little sesame oil if I've got it!. Good hot or at room temperature!.

--also you can put tabbouleh or the combination I just mentioned into a pita bread, tortilla or other flatbread for something more substantial that is handy to take along with you!.

Lemon & Sesame Chicken
Serves 4
Preperation Time: 10 mins
Cooking Time: 10 mins
4 boneless, skinless chicken breast
1 egg white
25g/1oz/2tbsp sesame seeds
2 tbsp vegetable oil
1 onion, sliced
1 tbsp Demerara (brown crystal) sugar
finely grated zest and juice of 1 lemon
3 tbsp lemon curd
200g/7oz can water chestnuts, drained
lemon zest, to garnish
1!. Place the chicken breasts between 2 sheets of cling film (plastic wrap) and pound with a rolling pin to flatten!. Slice the chicken into thin strips!.
2!. Whisk the egg white until light and foamy!. Dip the chicken strips into the egg white, then coat in the sesame seeds!.
3!. Heat the oil in a wok and stir-fry the onion for 2 minutes until softened!.
4!. Add the chicken to the wok and stir-fry for 5 minutes, or until the chicken turns golden!.
5!. Mix the sugar, lemon zest, lemon juice and lemon curd and add to the wok!. Allow it to bubble slightly!.
6!. Slice the water chestnuts thinly, add to the wok and cook for 2 minutes!. Garnish with lemon zest and serve hot!.Www@FoodAQ@Com

I would try and invest in a slo-cooker and do plenty of big stews etc!. The ingredients can be left put straight in and with a bit of liquid left to simmer all day long and if you are not ready just turn down to auto or warm!. This will keep your food warm but not cooking any more!. I have frequently done this!. All you have to do then is either boil some pasta, potatoes rice or whatever, and dig in!.

Pasta and Ragu/Dolmio etc!. Takes ten minutes max!. Grate some cheese on top, or add some veg in with the pasta to cook - frozen veg will do!. Do a load & stick some in the fridge, lasts a while!. also, stir fry - takes a while to prepare the veg but after that its done in minutes!.Www@FoodAQ@Com

Cheesy beanos - Toast bread one side under grill, cook beans then add to non toasted side, cover with cheese and put back under grill until cheese melts - delicious! (5-10mins)
Tuna Salad - Lettuce, red and green peppers sliced, can of tuna, tomatoes & cucmber!. Mix with balsamic vinegar and olive oil and add some crusty bread - yum! (10-15mins)Www@FoodAQ@Com

Slowly cooked fried eggs on toast!. With abit of salt en pepper!. Can't beat it!. The slower cooked the better!.

Make up a milk shake!. fruit such as banana, strawberry or whatever is in season!. 300 mls milk + fruit + 2 scoops Ice Cream + sugar to taste!. Whizz together!. Pour!. MMMmmmWww@FoodAQ@Com

Boil quick cook pasta and drain!. While still hot add a blob of butter and grate on your favourite cheese - Enjoy! If you want to save washing up eat it from the pan!.Www@FoodAQ@Com
