This is hardly authentic chili but my family & friends like this recipe (which serves a lot more than 4)!.

Simple Chili

2 large (or 3 medium) onions, chopped
3 lbs (or up to 4 lbs) ground beef
1 #10 can (102-117 oz) whole, peeled tomatoes w/juice*
2 tsp salt
1 tsp black pepper
2 tsp sugar
3 Tbs chili powder
2 cloves garlic, crushed & chopped (or ?-? tsp garlic powder)
1 Tbs cayenne pepper (or to taste)
30 oz can of chili hot beans
Any optional ingredients **

In a large skillet, brown ground beef and onions!.
Drain off fat!.

While meat is cooking, cut whole tomatoes into pieces!.*

Place all ingredients into large stock pot and simmer for 3 or more hours!.


* Diced tomatoes can be used but I find that there ends up being too many tomatoes and not enough juice!. If you do use diced tomatoes, increase the ground beef to 4 lbs!.
Of course, the best tomatoes to use are those from your garden!
(3 qts frozen garden tomatoes for 3!.5 to 4 lbs of ground beef)

** Optional ingredients:
Hot red peppers, diced or crushed
Green peppers, diced

This is the best recipe for chilli con carne, its a mixture of a home recipe and ones I've looked up in cook books etc,

Fry one onion in butter till they are golden brown,
Add mince (preferably 5 star)
Break mince until cooked!.
Then add one tablespoon cumin
One tablespoon coriander
Shake of Paprika
2 cloves of chopped (fresh) garlic
Pinch of Salt and Pepper (if hint of chilli wanted, one quick shake of cayan pepper)
Stir and let the flavour come out!.
Add a tin of chopped tomatoes
Half a small tin of tomato paste,
Add a large of red kidney beans
The flavours enhance the longer you cook it,
When served, chop up some fresh coriander as a garnish and serve with basmati rice because it has the aromatic flavours which compliment the rest!.

Very simple!.!.!. But here's my chili con carne recipe:

You will need:
1 tbsp oil
1 red (or white) onion
Lean minced beef
1 tin chopped tomatoes
1 tin kidney beans
2 cloves of garlic
A sprinkling of chilli flakes
A dash of Lea & Perrins worcester sauce

Fry the chopped onion, garlic and mince in the oil, in a large non stick frying pan and wait for it to brown!. Once the mince is mostly cooked, add the chopped tomatoes and the kidney beans, and stir!. Next sprinkle in the chili flakes - A good way to guage how many is to stir them in and taste the sauce as you go!. You want it to have a bit of a kick, but so as it's not too spicy just add a little at a time!. Add a dash of Lea & Perrins and maybe a bit of black pepper to taste!. Simmer for 10 minutes and then serve!.Www@FoodAQ@Com

Shredded beef instead of ground(1LB!.)garlic(1 clove) cumin(1 tablespoon), one bay leaf,cup of a wet mixture of (BBQ) suace keptup, and water about 1/2 cup stew for say one hour!.!. add salt and pepper too taste!.!.should be thick and hearty!Www@FoodAQ@Com
