I'm roasting the pork with Archiote Powder!.
I have never made this before!.

Spicy Creamed Corn and Serrano Chiles (Elote con Crema y Chiles Serranos)
5 ears fresh corn, steamed for 3 minutes
? 2 tablespoons butter or oil
? 1/4 cup minced onion
? 4 serrano chiles, seeds and stems removed, minced
? 1/4 cup chopped epazote
? 2 tablespoons water
? 1/4 cup milk
? 1/2 teaspoon salt
? 1/4 teaspoon freshly grated black pepper
? 3/4 cup cream, warmed
? 1/2 cup grated white cheese, such as Mexican queso blanco


When the corn has cooled enough to handle, cut the kernels from the ears and set aside!.

Heat the butter in a small saute pan and add the onion, chile, epazote, and saute for 30 seconds!. Then, Add the water, milk, salt, black pepper, and the reserved corn and bring the mixture to a light boil!. Reduce the heat to a simmer and add the cream and the cheese; simmer only until heated through, and the cheese is melted, and do not let the mixture boil!.

Yield: 4 servings
