How to slice beef paper thin?!
The other day I was at a restuarant and noticed how their beef is sliced very thin, as in paper thin!. There is no way that the chef can cut it with a knife so perfectly every time!. I am guessing the slab of beef is cut with a machine!. Where can I find such a machine!? I tried googling it already and no luck!.Www@FoodAQ@Com

You can get slicing machines at places that sell kitchen appliances, like Target, Wal-mart, etc!. Target has one that is available online, but not in stores for $69!.99!. Just go to target!.com and enter "slicer" in the search box!.

High end restaurants and Japanese restaurants consider is a *Major* foe pas by using gadgets to slice meat!. What is on display is the chefs knife skills!. There is a technique where the meat is partially frozen and sliced paper thin using a meat slicer but freezing will always compromise the quality of the meat hence why chefs with great knife skills are so highly appreciated!.Www@FoodAQ@Com
Having excellent knife skills is a must for a high-end chef!. There is a trick to slicing raw beef paper thin!. Put the meat in the freezer for a few minutes so it is firmer!. Not frozen solid !.!.!. just firmer!. It's easier to get the paper thin slices!. You do need a good, sharp chef's knife and it takes significant practice to get that kind of knife control!.
If the beef was sliced that thin after cooking (such as a roast beef) it was probably done with a meat slicer like the ones you see in deli counters!. You can buy those for home use, but they are pricey!.Www@FoodAQ@Com

You can slice beef 'paper thin' with a couple of hints!.
1!. Have the beef a little bit frozen not completely!.!.!.just slightly frozen!.
2!. Cut the beef across the grain and take your time!.!.!.use very long strokes!.!.!.slicing as thin a strip as you can!.
I have a slicer that moves back and forth!.!.!.got it from my grandmother!.!.!.but I would rather use this method!.

Quite likely they used a meat slicer - and freeze the meat first (partially or fully depending on what kind of meat it is)- to get it that thin!. Other than that, a very sharp thin knife!.

Put it in the freezer for an hour or two, just until it starts to freeze, then slice it thin!. This will be easy because it will not squish and move as much when your cutting it!.Www@FoodAQ@Com

You need a slicing machine which may be found commercially--very pricey--sometimes, garage sales, where I luckily found mine, or go to a department store, where they sell a home model!.Www@FoodAQ@Com

If you can't find a machine, you should try an electric knife!. They cut through things easier than manual knife-work!. Look for them in places like Walmart or TargetWww@FoodAQ@Com
You need a really sharp knife probably about a 10 inch chefs knife and cut it at an angle that makes it easier!.Www@FoodAQ@Com
