I frequently make sticky rice in a rice cooker, so I often have leftover sticky rice!. Next day it's not quite as sticky and I use it for fried rice all the time!. Of course I wouldn't do that with freshly made sticky rice, it would be too wet (and!.!.!.!.sticky :D) It works great though, day after or even a couple of days, kept in the fridge!. The leftover rice is in a mass & I chop it up with a fork and knife, to separate into smaller clumps, then fry in vegetable oil & chopped onion, it all separates then into single grains!. Often I add some ramen seasoning/powdered chicken soup mix/whatever I have on hand!. Then I make a space in the center, add a little more oil and break an egg or two into it!. Cook that up quickly and mix it in with the rice!. Yummy!. Hope this helps!Www@FoodAQ@Com
Without being positive, I'm almost 100% sure that the gluten content will prevent sticky rice from being successful in a fried rice recipe!. the only thing I can think of to get around that is too cook and chill the rice before you attempt to re-cook it, but since the frying itself will release more gluten and sugar, it may be a no go!. Instead, why don't you make your usual sticky rice and use the fried rice ingredients independently in a stir-fry, or bbq some beef or chicken to wrap it in!. Good luck!!Www@FoodAQ@Com
