Chocolate Zabaglione

1/4 cup whipping cream, or heavy cream
1/2 cup semisweet chocolate chips
8 large egg yolks
2/3 cup sugar
1/2 cup dry Marsala
Pinch salt
1 pound fresh strawberries, hulled and quartered

Add cream and chocolate to a heavy small saucepan!. Cook over low heat, stirring often, until the chocolate chips are melted and smooth!. Set aside and keep warm!.
Whisk the egg yolks, sugar, Marsala, and salt in a large glass bowl until blended!. Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water!. Whisk the egg mixture over the simmering water until it is thick and creamy, about 4 minutes!. Remove from the heat!.

Using a large rubber spatula, fold the melted chocolate mixture into the egg mixture!.

Divide the strawberries among 6 coupe dishes!. Pour the warm zabaglione over the strawberries and serve!.Www@FoodAQ@Com

Chocolate Mousse with Strawberry Cream

3 tablespoons water
3 tablespoons granulated sugar
1 cup (6-ounces) semisweet chocolate pieces
4 tablespoons creme de cacao
1 cup (1/2 pint) whipping cream
1 (10-ounce) package frozen sliced California strawberries in syrup, thawed

In small saucepan over high heat bring water and sugar to boil, stirring!. Reduce heat; simmer 1 minute!.
Combine chocolate pieces and sugar mixture in blender of food processor fitted with metal blade; whirl until cool to room temperature!.
In medium bowl beat 3/4 cup of the cream to form stiff peaks!.
With rubber spatula fold chocolate mixture into cream, blending thoroughly!. Cover and freeze until firm, at least 6 hours!.
In blender or food processor combine strawberries with the remaining cream and creme de cacao; whirl until smooth!. Cover and chill!.

To serve, pour equal amounts of the strawberry sauce into 6 dessert dishes and add scoops of the chocolate mixture!.
Makes 6 servings!.

Served over ice cream

Strawberries sliced and sprinkled with a little sugar (allow to stand for 30 minutes for the strawberries to exude a little juice) - cream whipped with a little sugar and vanilla over the top - chocolate melted and drizzled over the top of the whipped cream!.

Strawberried lightly mashed with a little sugar, folded into a little of the whipped cream, gently tucked inside a nice crepe, topped with a little more of the strawberry mixture drizzled over the top - that topped with some more whipped cream and all drizzled with melted chocolate or with shredded chocolate!.

Make a chocolate cup with the melted chocolate!. Lightly mash the strawberries with a little sugar!. Gently fold into some sweetened whipped cream and place inside the chocolate cup!. Top with strawberry slices!.

Make a yummy chocolate mousse!

CHOCOLATE MOUSSE WITH WHIPPED CREAM AND STRAWBERRIES:

For the mousse:
1 cup heavy cream
10 ounces bittersweet chocolate (i would use semi sweet)
3 tablespoons butter
5 egg yolks
1 tablespoon water
1/4 cup sugar, divided
5 egg whites

For the topping and garnish:
1 cup heavy cream
1 pint ripe strawberries


Note: For this recipe it is easiest to have a series of stainless steel bowls available which you can use in succession over a pot, double boiler method!. (The bowls should be of a size which will nest inside the pot with interior clearance of an inch or so for the boiling water!.)
For the mousse:
Beat the heavy cream with an electric mixer until it is whipped, and set aside!.

Melt the chocolate and butter over a double boiler on medium heat!. Remove from heat and set aside!.

Combine the egg yolks, 1 tablespoon water, and half the sugar in a second metal bowl and whisk over the double boiler set over medium heat!. (Do not allow any additional water to splash into this bowl!.) Continue to whisk and insert a candy thermometer into the mix!. When it reaches 145 degrees F, remove from the heat and whip with an electric mixer until it cools!. Set aside briefly!.

Wash and dry the beaters for the electric mixer and wipe off the candy thermometer to have them clean for the next step!. In the third metal bowl, combine the egg whites with the remaining 1/8 cup sugar and whisk over the double boiler until the candy thermometer reaches 145 degrees F!. Then, remove from the heat and beat with the electric mixer until the whites are stiff!.

Fold the egg whites into the egg yolks!. Fold the chocolate into the eggs, then fold in the whipped cream!. Spoon into martini glasses or serving cups!. Refrigerate for at least 4 hours or overnight!.

For the toppings and garnish:
Use an electric mixer to beat the heavy cream until whipped!. Slice each strawberry up to the stem and spread into a fan!. Garnish chilled mousse with whipped cream and strawberries just before serving

fresh strawberries, sliced
Grand Marnier (or Triple Sec, or Brandy, or whatever liqueur you want to use)
Whipped cream
shaved chocolate
mint leaves (garnish)
