How "high" can game meat be when you eat it?!
For some reason I lay awake last night thinking about hare, pheasant and such, and how you are supposed to "hang" it for a while (ie!. let it putrefy a little) to make it more tender!. How rotten can you let it get!?

You dont hang it so it rotts you hang it to tenderize as it drains!. 1-2 days for small game, up to 5 days to a week for bigger game!. If its hot outside you hang it down in your basement over a old dropcloth coverd by cardboard!. If you dont wanna do that and dont have another cool location to hang it your going to need to get assistance from the local butcher or meat processer in your area!.Www@FoodAQ@Com
The meat doesn't get rotten it just drains and (if it's hot) gets a little funky!. My gram still hangs hers outside next to the clothes normaly she lets them hag for a day or two then pulls them down and makes them into a stew!. But if it's summer she'll hang them in her root celler to drain them so they don't rot!.Www@FoodAQ@Com
