Dumplings are easy to make!. They are just a bit intimidating the first time you make them!.

Either of the recipes you've already been given will work for rolled dumplings!. My recipe is about the same!. (These resemble thick noodles)!.

For dropped dumplings try this one (tender dollops):

Dropped Dumplings:
(for stew or chicken and dumplings)

1 cup flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
3 teaspoons melted butter or vegetable oil
1 teaspoon parsley (optional!. Dried parsley adds a little color but no real flavor!.)

Mix dumpling ingredients together until just moistened!.
Bring stew to a simmer
Drop dumplings by tablespoons onto chicken!.
Cover and cook 8 minutes!. Uncover and cook 4 minutes

Really Fail Safe Drop Dumplings:

Get a can of biscuit dough!.
Lay each biscuit on the top of a simmering stew!.
Cover and cook 10 minutes!. Uncover and simmer 4 more minutes!.

Note: Canned biscuits make a decent dumpling but to me they aren't as good as made from scratch!. But this is a good way to learn the technique for cooking dumplings and getting the texture exactly how you want it!.

I have found different dumpling work better for different types of soup base!. Some people like thick dumplings, and some like them to be light and airy!. I like mine a bit noodly, so I add an egg, sorry I dont have measurements, but here's is the one I use most often!.!.

1 egg beaten 1 spoonful of shortening, beat together,
add salt just a bit, add gradually about one cup and a half cup of flour, and about 2 teaspoons of baking powder, mix until all comes together, but not too much to make them tough!.
You can add dried chives, thyme or your favorite herb while stirring in the flour also!.
Drop by spoon fuls into boiling pot!. turn down heat, and simmer with out stiring ( or a very tender stir) for about 10 to 15 minutes!. The spoon ful should be about the size of a pecan!.Www@FoodAQ@Com

How funny, I just got best answer this morning for my recipe for dumplings, here it is again!!

INGREDIENTS
2 cups all-purpose flour
3 tablespoons shortening
1 teaspoon salt
1/4 cup water


DIRECTIONS
Mix together flour and salt!. Cut shortening into flour/salt mixture using a pastry blender, fork or two knives!. Stir in water to form a soft dough!.
On a floured surface, roll out dough very thin with a rolling pin!. Cut into 1 inch wide strips (I use a pizza cutter, but a sharp knife works also)!. Tear 1 inch long pieces of dough from these strips and drop into simmering broth!.
Cook 10 minutes with the pot lid off, then 10 minutes more with the lid on!. Serve with the broth and chicken meat, if using!.Www@FoodAQ@Com

Rolled Dumplings

# 2 cups all-purpose flour
# 2 teaspoons baking powder
# 1 teaspoon salt
# 1/3 cup shortening
# 1/2 cup milk
2 (14!.5 ounce) cans chicken broth

1!. Combine flour, baking powder and salt!. Cut in shortening and add milk to make a stiff dough!.
2!. Roll out to about 1/8 inch thickness and cut into 1 inch squares, 1 to 1 1/2 inch strips or diamonds!. Sprinkle lightly with flour and drop into boiling chicken stock!. Cover tightly and boil gently for 8 to 10 minutes!.Www@FoodAQ@Com

Easy Dumpling Recipe

* 2 cups of white flour
* 4 tsp!. baking powder
* 1 tsp!. salt
* 4 tbsp!. soft margarine or butter
* 1 cup of milk (or more)

1!. Combine flour, baking powder, and salt in a bowl!.
2!. Cut in butter that's been kept at room temperature or use soft margarine!.

I use the cheap canned biscuits, they come in a 4 pack at the grocery store!. I pull them apart and dust them with flour!. then I mash them flat with a jar or rolling pin!. Then cut or pinch it into small pieces, and drop into a large pot with boiling chicken broth!.!.!.!.!.stir from the bottom occasionally to prevent them from sticking!.Www@FoodAQ@Com
