King Ranch Casserole
6 chicken breast halves, cooked and diced

1 cup chopped fresh mushrooms

1 (10-3/4-ounce) can cream of mushroom soup
1 cup pasteurized process cheese spread
3 cups cooked rice (1 cup uncooked)
1 (10-ounce) box frozen broccoli cuts, thawed, drained
1 (8-ounce) can sliced water chestnuts, drained
1/2 cup sour cream
1/4 teaspoon ground black pepper
Vegetable cooking spray
1 cup (4 ounces) shredded Cheddar cheese
1/2 cup breadcrumbs or crushed croutons
Melt butter in a Dutch oven with oil over high heat; swirl pan to blend!. Add chopped mushrooms!. Cook and stir over high heat about 2 minutes!. Add onion and chicken-breast pieces!. Reduce heat to medium-high and cook until chicken is just cooked through, stirring in garlic the last minute or so!.
Add undiluted mushroom soup and the cheese spread (or if using Velveeta, dice it)!. Stir until cheese is melted!. Remove pan from heat!. Stir in the cooked rice, thawed broccoli, water chestnuts, sour cream and pepper!. Spoon mixture into a 2-quart baking dish sprayed with a nonstick product!.

1 teaspoon ground coriander
3/4 teaspoon salt
2 1/2 cups chicken broth
1 cup sour cream
1 1/2 cups monterey jack cheese
12(8inch) flour tortillas
Directions
1In a large saucepan cook onion and green pepper in the 2 tablespoons of butter until tender!.
2Combine onion mixture in a bowl with chopped chicken and green chili peppers!.
3Set aside!.
4For sauce, in the same pan melt 3 tablespoons butter!.
5Stir in flour, coriander and salt!.
6Stir in chicken broth all at once!.
7Cook and stir till thickened and bubbly!.
8Remove from heat!.
9Stir in sour cream and 1/2 cup of the cheese!.
10Stir 1/2 cup of the sauce into the chicken mixture!.
11Fill each tortilla with about 1/4 cup of the chicken mixture!.

When you wish to heat it, remove foil from the still frozen casserole, and place back into the dish that you froze it in initially to thaw; bake as directed!.

INGREDIENTS
1 (16 ounce) package medium seashell pasta
1 tablespoon vegetable oil
1 (10!.75 ounce) can condensed cream of mushroom soup
1 (15 ounce) can mixed vegetables, drained

2 cups shredded Cheddar cheese
salt and pepper to taste
DIRECTIONS

11Fill each tortilla with about 1/4 cup of the chicken mixture!.
12Roll up and arrange in a 13x19x2 baking dish!.
13Pour remaining sauce over and sprinkle with remaining cheese!.
14Bake, uncovered in a 350 oven about 25 minutes or until bubbly!.
15Can be made ahead of time and frozen!. Place a large sheet of heavy duty foil in your baking dish with enough foil over the end to fold up and over the frozen casserole!. Make the casserole up until you are ready to bake it!. Freeze it solid!. Remove frozen casserole from your dish and encase in the excess foil for storage!. This frees up the dish for other meals!. When you wish to heat it, remove foil from the still frozen casserole, and place back into the dish that you froze it in initially to thaw; bake as directed!.

Cheesy Tuna Casserole
INGREDIENTS
1 (16 ounce) package medium seashell pasta
1 tablespoon vegetable oil
1 (10!.75 ounce) can condensed cream of mushroom soup
1 (15 ounce) can mixed vegetables, drained
1 (6 ounce) can tuna, drained
2 cups shredded Cheddar cheese
salt and pepper to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil!. Add 1 tablespoon oil to the water to prevent sticking!. Add pasta and cook for 8 to 10 minutes or until al dente; drain!. Preheat oven to 350 degrees F (175 degrees C)!.
In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese!. Gently fold pasta into the soup mixture and mix thoroughly!. Pour pasta and soup mixture into a 11x7 inch baking dish!. Sprinkle remaining cup of cheese on top!.
Bake in a preheated oven until cheese is melted and bubbly

1 pt!. sour cream
1 can cream of chicken soup
1/2 c!. chopped onion
4 oz!. shredded Mozzarella cheese

1 tsp!. salt
1/4 tsp!. pepper
1 stick butter, melted
2 c!. crushed corn flakes, for topping
Defrost potatoes!. Grease a 13 x 9 inch baking pan!. Combine all ingredients, except topping!. Mix gently!. Sprinkle corn flakes on top!. Bake at 350 degrees for 45 minutes!.

Cook potatoes in salted boiling water about 20 min or until tender; drain!. mash while hot; stir in egg!. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape!. Season with salt and pepper!.

1 can SPAM, chopped fine
2-16 oz!. cans pineapple chunks, reserve juice
3/4 cup sugar
1/3 cup flour
2 cups sharp shredded cheese
Mix together pineapple and SPAM and place in greased 9x13 pan!. Mix together sugar, flour, pineapple juice pour over Pineapple/SPAM mixture!.Top cheese!. Topping: Melt 1 stick butter in frying pan!. Add 1 sleeve of Crushed Ritz crackers!. Saute until golden brown!. Place on top of casserole and Bake at 375 degrees For 30 minutes!.
Ham and Broccoli Casserole
3 c!. cooked ham, cut or chopped into small pieces
1 bunch fresh, or 1 pkg!. frozen, broccoli spears- cooked according to directions and drained
1 c!. or more cheddar cheese
1 or 2 eggs (one time I only had one egg and it still turned out good)
1 small can evaporated milk + at least 1/2 c!. milk
2 c!. Ritz crackers, crushed
extra cracker crumbs
Beat eggs and milk together!. Add crushed cracker crumbs!. In baking dish, layer the ingredients- starting with ham and broccoli!. Pour on some of the mixture!. Add cheese!. Repeat and end with cheese and some extra cracker crumbs on top!.

2 cups diced, cooked chicken (I have used 3-(5oz) cans of chicken, drained)
1- box long grain and wild rice (cook according to directions using chicken broth instead of water, I use can chicken broth)
1- can French Style Green Beans ( I like to add an extra can of green beans)
1- can cream of celery or cream of chicken ( i use cream of celery)
1/2 c!. mayonnaise
1/2 c!. sliced water chestnuts ( I omit)
1 small diced onion
dash pepper
Combine all ingredients in a baking pan!. Bake at 350' for 25 minutes!.

2 pounds of hamburger, cooked and drained (optional)
1 Pkg (16 oz) ziti or small tube pasta
1 egg, lightly beaten
1 carton (15oz) part-skim ricotta cheese, divided
1/2 cup grated Parmesan Cheese, divided
1 jar (28oz) spaghetti sauce ( I like to use extra sauce)
Italian Seasonings to taste (add to spaghetti sauce)
2 cups (8oz) shredded part-skim mozzarella cheese
~ Cook hamburger and drain grease, add to spaghetti sauce (If adding hamburger, you will need two jars of spaghetti sauce)
~Cook pasta according to package directions!. Drain pasta; set aside!. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese!.
~Spread one cup or more spaghetti sauce in a baking dish coated with non stick cooking spray!. Top with a third of the pasta, half of the ricotta cheese mixture, 2/3 cup mozzarella cheese, 1 tablespoon parmesan cheese and 1 cup sauce!.
~Repeat layers of pasta, ricotta mixture and mozzarella cheese!. Sprinkle with 2 tablespoons Parmesan cheese!. Top with the remaining pasta, sauce, mozzarella cheese and Parmesan cheese!. Cover and bake at 375' for 45-50 minutes or until heated through!. Yield 12 servings
Stove top Easy Cheesy Chicken Bake
1 pkg (6oz) Stove Top Stuffing Mix for Chicken
3 cups cooked chicken, diced (i have used less)
1 (14 oz) frozen broccoli florets, thawed, drained
1 can cream of chicken soup
1/2 c!. milk
1 1/2 c!. shredded cheddar cheese (i prefer cheez whiz or velveeta)
Preheat oven to 400'!. Prepare stuffing mix as directed on pkg; set aside!.
Mix chicken and broccoli in baking dish!. Stir in soup, milk and cheese; top with the prepared stuffing!.
Bake 30 minutes or until cooked through

2-3 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c!. mayonnaise
1 1/2 tsp!. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain!.(Boiling the broccoli speeds up the cooking time)!.
Combine soup, mayonnaise, and lemon juice!. Mix with broccoli and diced chicken!. Sprinkle with cheese and stuffing mix!. Bake at 350' for 35 minutes :0}

3c!. cooked rice (i use success)
1 tbsp!. butter or margarine
1 can of cream of chicken
1 soup can of milk
1/2 c!. chopped onion (recipe calls for 1 cup, I'm not too crazy about onions so I use 1/2 cup)
1/2 c!. chopped celery (recipe calls for 1 cup, I'm not too crazy about celery so I use 1/2 cup)
3 c!. chicken, chopped
1 pkg frozen broccoli, cooked
8 oz Cheez Whiz (some times i add more)
the cheesier the better
Saute onions and celery in butter until clear!.
Add chicken soup and milk!.
Add cheez whiz and heat slowly until blended!.
Mix in broccoli, rice and chicken!.
Season to taste!. Pour into casserole dish, and
bake at 350' for 30 minutes!.
(casserole may be frozen after baking)
This casserole is absolutely delicious!. Sometimes I fix the
hashbrowns by themselves as a side dish for supper!.
Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds!. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz!. sourcream
1 can cream of celery
1 tsp!. salt
1 tsp!. pepper
1/2 stick butter, melted
Brown sausage, and set aside!. Mix all other ingredients together!. Put in greased casserole!. Bake at 350' for 45 minutes!. Remove from oven, and place sausage on top!. Cook for another 15 minutes!. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages!.

1 cup water
1 pound boneless skinless chicken breasts
or chicken breasts tenders
1/2 tsp salt
1/4 tsp!. black pepper
1/4 tsp!. paprika
1/2 c!. diced celery
Combine soup, rice and water in crockpot!. Add chicken;
sprinkle salt, pepper and paprika!.
Sprinkle celery over chicken!. Cover; cook on low 6 to 8 hours
or on high 3 to 4 hours!.
* or use 2 cans cr!.of chicken and 1 can cr!. of celery
or 2 cans cr!. of chicken and 1 can cr!. of broccoli
