Question: What are some healthy quick easy dinner recipes!?
im having my baby this week an will be in hospital for 3 or so nights an need to cook some meals hubby can have in containers in the fridge for dinner any suggestions!?!? oh an nothing that requires more than dumping in the microwave on his behalf or he'll just get chinese :lWww@FoodAQ@Com

You could make soup, spaghetti bolognese, lasagna, mac n cheese or mixed salads made up, he could just add tuna or chicken!.

make some spaghetti, with extra sauce, then he can just put the container in the microwave and warm up (you can do this with any type of pasta that he enjoys) you can make chili, this is a great refridgerate and warm meal, and actually gets better while it sits!. Make smoked sausage with grean beans and potatoes, it is another thing that warms well!. you could also fry up some hamburger patties, then he can warm the patties in the microwave and make hamburgers and have some chips or another veggie!.

For freezer meals, make a lasagna then you can freeze it and reheat!. The prepackaged crock pot meals would be great in this situation, as you can start it in the morning and only have to open the package and add water, and it will cook all day!. You could also make vegetable soup and freeze in containers to reheat!.

Broiled Lemon Pepper Salmon

1 salmon filet (1 lb)
2 tablespoons mayonnaise or miracle whip
1 teaspoon lemon pepper seasoning*
1/4 teaspoon ground mustard OR 3/4 teaspoon yellow mustard

Set oven control to broil!. Spray rack in broiler pan with cooking spray!. Place salmon, skin side up, on rack in pan!.
Broil 4-6 inches from heat for 7 minutes!. Turn salmon; broil 7-9 minutes longer or until fish flakes eisily with a fork!.
Meanwhile, in small bowl, mix remaining ingrediants!.
Spread mixture over salmon; broil 1-2 minutes longer or until topping is lightly browned and bubbly!.

*If you have no lemon pepper seasonong, mix 1/2 teaspoon fresh lemon zest with 1/2 teaspoon freshly ground black pepper

Vegetarian Shepards Pie

6 Tbs!. extra virgin olive oil, divided
1 large yellow onion, roughly chopped
4 cloves garlic, crushed
2 Tbs!. curry powder
1 tsps!. ground cumin
2 small red or green bell peppers, chopped
1 eggplant, cubed, unpeeled (3 cups)
1 15-ounce can diced tomatoes
10 red potatoes, halved
1/2 cup half-and-half
1 cup frozen or fresh peas
1 cup grated Parmesan cheese
Salt and freshly ground pepper, to taste

Preheat oven to 400 degrees, In a large skillet on medium heat, heat 2 Tb!. oil; add onion, garlic, curry and cumin!. Saute until onions are soft 5 minutes!.
Transfer to bowl!.
Heat remaining oil in skillet; add peppers, eggplant, tomatoes and 1/2 cup water!. Saute until soft 20 minutes!. Stir in onions!. Place in a shallow 8-by-8-inch baking dish!.
In a saucepan, boil potatoes until done!. Drain and smash!. Stir in half-and-half, peas, salt and pepper!.
Spread over vegetables and top with Parmesan!.

Lasagnas are good to freeze and so are soups!. I would make those for yourself for when you get back from the hospital!. As far as husband is concerned!.!.!.I am sure he is capable of making some meals himself or buying some stuff!. If he isn't then maybe it is time he learned!.!.!.he will be having to take care of you and baby at times!. Relax, take some time and enjoy your pregnancy!. Sloppy Joe's!

1 cup green pepper slices
? cup red onion slices
3 teaspoons olive oil
1 pound beef for stir-fry
? cup tomato chili sauce
1 tablespoon brown sugar
1 tablespoon cider vinegar
Pepper to taste
4 hard or kaiser rolls

1!. Cut the pepper and onion slices in half!.
2!. In a large deep nonstick skillet, heat 2 teaspoons of the vegetable oil over high heat!. Add the beef and stir-fry until no longer pink, about 1 minute!. Transfer to a plate!.
3!. Add the remaining 1 teaspoon oil and chopped peppers and red onions to the skillet!. Cook over medium heat, stirring frequently, until tender, about 4 minutes!. Stir in any juices that have accumulated from the beef, the chili sauce, brown sugar, vinegar, and pepper!. Cover and bring to a boil!. Reduce the heat to medium-low and simmer, stirring occasionally, for 5 minutes!.
4!. Stir in the beef and any juice on the plate and simmer, uncovered, for 1 minute to heat through!.

MICROWAVE SOUTHWESTERN CHILLI!!! =)

1 cup onion slices
1 cup green pepper slices
2 garlic cloves
1 tablespoon olive oil
1 tablespoon chili powder or Cajun seasoning
1/2 teaspoon dried oregano, crumbled
Salt and pepper to taste
1 pound lean ground beef
1 can (16 ounces) black beans, drained
1 can (28 ounces) crushed tomatoes in puree
3 tablespoons minced cilantro

1!. In a food processor, coarsely chop the onion and pepper slices and garlic!. Scrape into a 2 1/2-quart microwave-safe casserole!.
2!. Add the olive oil, chili powder, and oregano, season with salt and pepper, and stir to combine!. Cover and microwave on High, stirring once, for 3 minutes!.
3!. Add the beef and stir to break up the pieces!. Season with salt and pepper!. Cover and microwave on High, stirring once, for 5 minutes!.
4!. Rinse and drain the black beans!. Add the beans and tomatoes to the casserole!. Cover and microwave on High, stirring twice, 8 to 10 minutes, or until flavorful!.
5!. Mince enough cilantro to measure 3 tablespoons!.


BBQ PORK SANDWHICHES

1 pound pork tenderloin
1 cup ketchup
2 tablespoons spicy brown mustard
1 tablespoon molasses
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground ginger
2 hard rolls, such as kaiser rolls

1!. Cut the pork tenderloin in half lengthwise and place 1/2 on your work surface; place a piece of plastic wrap over the top!. With the bottom of a heavy skillet, lightly pound the tenderloin until 1/2 inch thick!. Repeat with the remaining half, then cut the tenderloins crosswise into 1/2-inch-wide strips!.
2!. In a medium skillet, combine the ketchup, mustard, molasses, Worcestershire sauce, garlic powder, onion powder, and ginger and bring to a boil over medium-high heat!. Immediately reduce the heat and simmer for 5 minutes!.
3!. Add the pork strips to the skillet and cook, stirring occasionally, for 10 minutes!.
4!. Meanwhile, split the 2 hard rolls in half horizontally!. Place the halves in a toaster oven and toast until lightly colored!.Www@FoodAQ@Com
