Answers:
The apple juice is a good idea, I might go with white grape juice and a splash of lemon for the acid!. White wine vin could easily overpower your shrimp and pasta!.Www@FoodAQ@Com

What you could do is to substitute lemon juice for the white wine!. Or you could reduce the white wine vinegar by boiling it down to about half its original volume, which sweetens it considerably!.Www@FoodAQ@Com

This may be weird, but use apple juice!. In many recipes that i have tried out, ti calls for wine, and i can't drink alcohol so usually the recipe and judgment has shown that apple juice serves as a just alternative!.Www@FoodAQ@Com

I would say just skip that step!.
It'll be fine without the wine!.Www@FoodAQ@Com

You need to replace the amount of liquid!. I would suggest water or chicken broth!.Www@FoodAQ@Com
