You need some type of acid or the rice will taste flat!. You can use white wine vinegar or a little splash of plain white vinegar!. Add a few more pinches of sugar to compensate!.Www@FoodAQ@Com
I don't think any self respecting sushi chef would DREAM of omitting rice vinegar!
But then again how many of us are sushi chefs!? Let alone self respecting ones!.
The vinegar adds moisture (making the rice easier to handle) and tang (making the raw fish, and veggies that much more yummy)!.
So - I believe you really do kind of need some kind of vinegar!. My vote would be for plain old white!.Www@FoodAQ@Com

Yes, you can substitute it with something acidic/sour!.
If you don't use it nor substitute it, it won't taste Japanese!.
I suggest you substitute it with lemon juice!. Another substitute is orange juice!. It won't taste Japanese but it's delicious!.Www@FoodAQ@Com

The short answer is no!. You can use standard cooking vinegar or even no vinegar at all!.
If you have a good supermarket near you, you can usually find cooking vinegars and wines (including rice vinegar) right next to cooking oils!.Www@FoodAQ@Com
