Make a mashed potatoe with them and add instant potatoes to the mix and it will bind it up and thicken!. No specific measurement you will have to play it by ear!. Just add a bit at a time and all the while balancing it with your butter, whole milk, cream, half and half , or chicken broth!. (whichever you are using!.)Www@FoodAQ@Com
The only way I know of is to put them in the freezer for 10 -15 mins to stop them from softening !.!.!.!.!.!.!. if you find out after that they are too soft for your dish, the only thing you can do is save them for another dish or alter your potato dish !.!.!.!.!.!.!. like turning them into mashed potatoes, cutting them in cubes and frying and roasting the them, or slicing them and making some sort of au gratin or scalloped potato dish !.!.!.!.!.!. = )Www@FoodAQ@Com
I seem to have that problem too!. I always rinse them with cold water to slow down any more cooking!. The last time I boiled potatoes, I put them in the freezer for about 10 minutes and it stopped them from softening any further!.Www@FoodAQ@Com
