Crepes

3 eggs, large
1 1/3 cups milk
3/4 cup all-purpose flour
6 tablespoons butter, melted, plus more for pan
2 tablespoons cocoa powder
Pinch salt

In a medium mixing bowl, whisk the eggs!. Add remaining ingredients and whisk vigorously until combined, small lumps are ok!. Set batter aside to rest for 20 minutes!.
Heat an 8-inch nonstick saute pan over medium heat!. Lightly brush the pan with melted butter!. Pour 1/4 cup batter into the hot pan, twirling the pan so the batter spreads out evenly into a very thin layer!. Cook about 30 seconds until the crepe comes away from the sides of the pan!. Gently flip the crepe over with your fingers or the help of a rubber spatula and continue cooking another few seconds!. Transfer to a plate and repeat cooking crepes until all the batter is used!.

1 1/2 cups all-purpose flour

*EASY PANCAKE AND WAFFLE SYRUP

1 c!. sugar
1 c!. brown sugar
1 c!. cold water
2 tbsp!. butter
1/2 tsp!. maple flavoring

Combine first 4 ingredients in a 2 quart saucepan!. Bring to boil and boil for 5 minutes!. Take off burner to add the maple flavoring!. Makes about 1 1/2 cups!.

*Quick and Easy Pancakes

1 large egg
5 teaspoons sugar
1 1/3 cups milk
1 cup flour
3/4 teaspoon baking powder
1 1/2 tablespoons vegetable oil (optional)

In a bowl or mixing jug, whisk together egg, sugar and half of milk (2/3 cup)!.
Add the flour and mix throughly!.
Then add remaining milk (2/3 cup) and baking powder!. It should be the consistency of thick cream!.
(Optional): Add 1-1/2 tsp oil if you have trouble with sticking!.
Beat until smooth!.
Pour about a soup spoon sized amount onto a pre-heated lightly greased frying pan or griddle (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium)!.
Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side (~45 seconds/side depending on stovetop)!.
Remove from pan and pile up on a plate (cover with a paper towel until served)!.
Serve with whatever you like and enjoy!.

*EASY OVEN PANCAKE

1/3 c!. butter
4 eggs
1 c!. flour
1 c!. milk
1/2 tsp!. cinnamon
Syrup or fruit topping

Heat oven to 400 degrees!. Melt butter in oven in a 9 x 13 inch pan or 10-12 inch round ovenproof skillet!. Beat eggs, flour, milk and cinnamon in small bowl until smooth!. Pour over melted butter in oven!. Bake until puffed and center is dry, 20-25 minutes!. Serve immediately with syrup or fruit topping!. Serves 4-6!.

*Apple Pancakes

1/4 cup butter, melted
1 egg
1 cup milk
1 cup shredded tart apple
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon ground cinnamon
1 tablespoon white sugar

In a large bowl, combine butter, egg, milk and apple!. In a separate bowl, sift together flour, baking powder, cinnamon and sugar!. Stir flour mixture into apple mixture, just until combined!.
Heat a lightly oiled griddle or frying pan over medium high heat!. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake!. Brown on both sides and serve hot!.

*Whole Wheat Blueberry Pancakes

1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 egg
1 cup milk, plus more if necessary
1/2 teaspoon salt
1 tablespoon artificial sweetener
1/2 cup blueberries

Sift together flour and baking powder, set aside!. Beat together the egg, milk, salt and artificial sweetener in a bowl!. Stir in flour until just moistened, add blueberries, and stir to incorporate!.
Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray!. Pour approximately 1/4 cup of the batter into the pan for each pancake!. Cook until bubbly, about 1 1/2 minutes!. Turn, and continue cooking until golden brown!.

*Crepes with Tangy Lemon Sauce

1 cup plain white flour
1 egg, lightly beaten
1/2 tsp margarine (milk-free)
2 Tbsp custard powder
1/2 cup sugar
1/2 cup lemon juice
1 cup lowfat soy drink
1 1/2 cup lowfat soy drink, extra

Sift flour into a bowl!. Gradually add combined egg and 1 cup soy drink, mixing until smooth!.
Heat margarine in a non-stick skillet!. Pour off excess!. Add 2 tablespoons batter, rotating pan quickly to coat bottom thinly and evenly!. Brown on both sides!. Repeat until all batter mixture is used!.
Combine custard powder and sugar in a saucepan or bowl!. Gradually add lemon juice and add 1 1/2 cups soy drink, stirring until smooth!.
Stir over medium heat until mixture boils and thickens (or microwave on HIGH [100%] for 5 minutes, stirring occasionally!.
Serve over warmed crepes!.

*Pancakes

1 1/2 cups flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
2 egg
1 1/4 cups milk
3 tablespoons oil
1 slice butter

Combine dry ingredients!.
Stir in the eggs and milk!.
Stir in the oil and beat well!.
Melt slice of butter on a griddle over moderate heat!.
When griddle is hot, pour pancake batter (abput 1/4 cup) onto the surface!.
Cook until golden brown and then flip!.
Cook until golden on both sides!.
