Help with a recipe please?!
I want to make the following meal, but was wondering whether I could substitute the cottage cheese for soft cheese (like Laughing Cow!. Many thanks for any help!.
Cheesy Potato Casserole
Ingredients
2 cups creamed cottage cheese
1 cup sour cream
1/3 cup sliced green onion
1 clove chopped garlic
2 teaspoons salt
7 cups potato, cooked & diced
1/2 cup grated cheddar cheese
paprika to garnish
Method
Combine the creamed cottage cheese, sour cream, sliced green onion, chopped garlic and salt!.
Fold in the potatoes and pour in greased 1-1/2 flat-ish casserole dish!.
Top with the grated cheese and light dusting of paprika!.
Bake at 350 F!. for 40 minutesWww@FoodAQ@Com

You most certainly could make the substitution, however, I don't think I would put in the equivalant amount!.
Cottage cheese certainly isn't the most flavorful cheese, and in this recipe, it's being used more for it's texture than it's flavor!.
What I would do is put in a cup of laughing cow, and then add some milk or cream!. You're losing the liquid factor of cottage cheese by switching the soft cheese!. I'd say 1/2 - 3/4 cup of milk!. Start with the small of the amounts, mix and just see how the consistency feels to you!. If it appears dry before it bakes, it's going to come out even more so!. You can always add a little more milk!.
Just be careful not to put too much in as it's a lot harder to take out than put it! Good luck!Www@FoodAQ@Com

I think the cottage cheese binds the other ingredients together and not sure that a soft cheese would suffice!. Ricotta is always a good substitute!. I have a similar recipe that calls for cream of chicken soup instead of cottage cheese that would work too!.Www@FoodAQ@Com
I have a very similar recipe and have never put in cottage cheese!. Don't know what it does to make it different!. So my answer would be absolutely make it without and adding the other I would just omit!. Unless you don't mind trial and error!.Www@FoodAQ@Com
Any cheese should do - it might affect the texture or consistency slightly - cottage cheese is just to make it seem 'healthy'! - You should try a layer of baked beans in the middle - yummy!!Www@FoodAQ@Com
