Mustard Crusted Rack of Lamb

1 rack of lamb, trimmed (about 1 1/2 pounds)
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoons vegetable oil
2 tablespoons Dijon mustard
2 teaspoons minced garlic
1/4 cup seasoned bread crumbs
1 tablespoon grated Parmesan

Season rack of lamb well on all sides with salt and pepper!. Heat a medium skillet over high heat and, when hot, add the oil!. When the oil is almost smoking, add the rack of lamb and brown well on all sides, about 6 minutes!. Transfer the lamb to a plate and set aside to cool slightly before proceeding!.
Preheat the oven to 450 degrees F!.

Using the back of a spoon, spread the mustard evenly over all sides of the lamb!. Spread the minced garlic over the lamb in the same manner!.

In a small mixing bowl combine the breadcrumbs and grated cheese and toss to thoroughly combine!. Using your hands or a spoon, spread the breadcrumb mixture evenly all over the lamb, pressing so that the crumbs adhere to the meat!.

1 1/2 cups lightly packed fresh mint leaves
3/4 cup lightly packed fresh basil leaves
1/2 cup walnuts, toasted
2 tablespoons freshly grated Parmesan
2 tablespoons fresh lemon juice
2 garlic cloves
3/4 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1/3 cup plus 2 tablespoons extra-virgin olive oil
3 (1 1/2-pounds each) racks of lamb, trimmed and frenched

Blend the mint, basil, nuts, cheese, lemon juice, garlic, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a food processor until the herbs are finely chopped!. With the machine running, gradually blend in 1/3 cup of oil until the mixture is smooth and creamy!.

Preheat the oven to 400 degrees F!.

Watching closely, broil the lamb chops 3 inches from the heat source until cooked to desired doneness, about 3 minutes per side for medium-rare!. Spread the pesto over the chops!. DIRECTIONS

With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste!. freshly ground black pepper
1/2 ounce butter (extra)


Combine parsley, spring onions, garlic, rosemary, breadcrumbs and melted butter in a bowl!.

Sprinkle the rack of lamb with salt and pepper!.

Melt the extra butter in a pan and brown lamb evenly all over!.

Cover lamb with the herb mixture and place in a baking dish!.

Bake at 425F degrees for 15-20 minutes!.

(lamb should be quite pink) Remove and keep warm for 10 minutes!.

Slice into individual chops!.

This is the easiest recipe and my go-to for after work dinners in a hurry!.

Smear your rack of lamb on both sides and in between the ribs with garlic butter!. Press into bread crumbs and place (fat side up) in a 350 oven for 30 minutes!. It will come out perfectly rare!. 35 minutes for medium, but no longer because well done lamb isn't very tasty!.

Serve with asparagus and little red potatos, boied with a dill/cream sauce on the side!.
