Marinated Tuna Steak

INGREDIENTS

1/4 cup orange juice
1/4 cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon chopped fresh oregano
1/2 teaspoon ground black pepper
4 (4 ounce) tuna steaks

DIRECTIONS

In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper!. Place the tuna steaks in the marinade and turn to coat!. Cover, and refrigerate for at least 30 minutes!.
Preheat grill for high heat!.
Lightly oil grill grate!. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade!. Cook for an additional 5 minutes, or to desired doneness!. Discard any remaining marinade!.Www@FoodAQ@Com

---Seared Encrusted Tuna Steak Salad

Ingredients
1 small dried red chili
1 tablespoon coriander seed
1/2 clove garlic
1 cup basil, finely chopped
1 cup cilantro, finely chopped
lemon, juice of
salt
freshly ground black pepper
4 tuna steak (8-10 oz each)
salad greens
olives
sun-dried tomato
basil

Directions

1)Smash up the chili and the coriander in a martar and pestle!.

2)Add the garlic, basil, cilantro, and lemon juice to taste!.

3)Mix together, and season!.

4)Lay out tuna steaks on a tray, season both sides and rub the herb mixture on to each side!.

5)Heat pan and rub it with a little olive oil!.

6)Put on the tuna!.

7)Sear the tuna so that it toasts, fries, and browns (about 45-60 seconds on each side)!.

8)Rip steaks in half and serve on salad greens with sun-dried tomatoes, olives, and basil!.

---Pepper- Grilled Tuna Steak With Parsley- Garlic Butter

Ingredients
2 tablespoons kosher salt
1 cup freshly cracked black pepper
4 (8 ounce) tuna steaks, at least 1 inch thick
2 tablespoons olive oil
For the butter
1/2 cup unsalted butter, softened
1 teaspoon minced garlic
2 tablespoons fresh lemon juice (about 1/2 lemon)
1/4 cup roughly chopped fresh parsley

Directions

1) Make the butter: Combine butter, garlic, lemon juice and parsley and mix well!. Cover and refrigerate!.

2) In another small bowl, combine the salt and pepper and mix well!. Press the tuna steaks into the mixture and coat on all sides; drizzle tuna lightly with olive oil!.

3) Grill over a medium-hot fire for 4-5 minutes per side for medium rare, depending on thickness!.

4) Serve with a large spoonful on the butter on top of each steak!.


---Grilled Tuna Steak with Nectarine Relish

Ingredients
4 fresh tuna steak, 1 inch thick
4 tablespoons oil
salt
fresh ground pepper

Nectarine Relish
1 red bell pepper, julienned
6 firm ripe nectarine, peeled and sliced
1 medium red onion, julienned
1 teaspoon minced garlic
1/4 cup julienned fresh basil
1/4 cup red wine vinegar
1/4 cup orange juice
2 tablespoons fresh lime juice
1/4 cup olive oil


Directions

1) In a bowl, add all the relish ingredients; toss to combine; season with salt and pepper to taste (mixture will be slighly runny)!.

2) Chill relish until ready to serve!.

3) Rub tuna steaks with oil and season with salt and pepper!.

4) Grill 4-5 minutes per side over medium-hot grill (do no overcook)!.

5) To serve: spoon relish onto individual plates!.

Here's my favorite!. I make it for company often and always have people begging for more!. Be very careful not to overcook the tuna!. It should be red in the middle!. They cook very quickly, so have your plates read and don't leave them once you throw them on!. Enjoy!

Seared Tuna w/Soy Ginger Butter Sauce

INGREDIENTS:
3 shallots, minced
5 TBSP fresh minced fresh ginger
1 lemon, juiced
1/2 cup dry white wine
1/2 cup heavy cream
1/2 cup butter, chilled and cut into small cubes
3 TBSP soy sauce
salt & pepper to taste
2 TBSP sesame oil
6 (6 ounce) tuna fillets
fresh chopped cilantro (optional)

DIRECTIONS:

In a sauce pan over medium heat, combine shallots, ginger, lemon juice, and white wine!. Cook until liquid is reduced to approximately 2 tablespoons!. Stir in heavy cream, and bring to light boil!. Reduce cream by half; do not burn!. Stir in soy sauce, then transfer to blender (or you can just use a hand blender)!. Blend on low while slowly adding butter, a few cubes at a time, until all of the butter is emulsified!. Season to taste with salt and pepper!. Keep sauce warm!.


Brush both sides of the fillets with oil and season with salt and white pepper!. Pan sear fish for about 2 minutes per side, or until done!. Be careful not to overcook!. Serve with ginger butter sauce and top with cilantro, if desired!.Www@FoodAQ@Com

Teriyaki Tuna Steaks


INGREDIENTS
1/4 cup reduced-sodium soy sauce
3 tablespoons brown sugar
3 tablespoons olive or canola oil
2 tablespoons white wine vinegar or cider vinegar
2 tablespoons sherry or chicken broth
2 tablespoons unsweetened pineapple juice
2 garlic cloves, minced
1 1/2 teaspoons ground ginger
4 (6 ounce) tuna steaks


DIRECTIONS
In a bowl, combine the first eight ingredients; mix well!. Remove 1/3 cup to a small bowl for basting; cover and refrigerate!. Pour remaining marinade into a large resealable plastic bag; add tuna!. Seal bag and turn to coat; refrigerate for up to 1 hour!.
Coat grill rack with nonstick cooking spray before starting the grill!. Drain and discard marinade!. Grill tuna, uncovered, over medium heat for 5-6 minutes on each side or until fish flakes easily with a fork, basting frequently with reserved marinade!.Www@FoodAQ@Com

Seared tuna with yoghurt mash and red pepper salsa


Serves 1
Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
For the seared tuna
150g/5?oz fresh tuna steak
1 tbsp olive oil
salt and freshly ground black pepper
For the yoghurt mash
1 large potato, peeled and cubed
2 garlic cloves, peeled and finely chopped
3 tbsp sesame seeds, toasted
25g/1oz butter
3 tbsp Greek yoghurt
? tsp freshly grated nutmeg
salt and freshly ground black pepper
For the red pepper salsa
2 tbsp soy sauce
2 tsp honey
1 tsp fish sauce
? lemon, juice only
? garlic clove, peeled and finely sliced
pinch dried chilli flakes
? red pepper, deseeded and finely chopped
For the crystallised lemon
? lemon, grated zest only
1 tsp sugar
pinch salt
fresh coriander leaves, to serve



Method
1!. Preheat the oven to 150C/300F/Gas 2!.
2!. For the tuna, rub the tuna with olive oil and season well with salt and freshly ground black pepper!. Heat a griddle pan until smoking hot, place the tuna in the pan and griddle for two minutes on each side!. Remove from the heat and keep warm!.
3!. For the mash, place the cubed potato and garlic into a small pan of boiling water and boil for 8-10 minutes, or until the potato is soft!. Drain and return to the saucepan, add the sesame seeds, butter, Greek yoghurt and nutmeg and mash until smooth!. Season well with salt and freshly ground black pepper!.
4!. For the red pepper salsa, place the soy sauce, honey, fish sauce, lemon juice, garlic, chilli and red pepper into a small bowl and stir well!.
5!. For the crystallised lemon, put the grated lemon zest into a small saucepan of boiling water and boil for 2-3 minutes!. Drain away the water and dry the lemon zest as well as possible!.
6!. Add the sugar and salt to the blanched lemon zest and stir well to coat!. Place the lemon zest onto a non-stick baking sheet and spread out well!. Place in the oven for ten minutes, or until the lemon peel has dried out and is beginning to curl up!. Remove from the oven and leave to cool!.
7!. To serve, place the mash onto a serving plate, top with the seared tuna and then the crystallised lemon and spoon the red pepper salsa around the sides!. Garnish with coriander leaves!.Www@FoodAQ@Com

mix some soy sauce, sesame oil (small amount), smashed garlic and grated ginger together and brush onto all sides of the tuna steak!.!.!.let tuna steak sit for 15-30 minutes with this sauce and allow it to marinate slightly!.!.!.roll tuna steak in sesame seeds so it's coated on all sides!.!.!.get your heaviest pan or a grill as hot as it can get and sear the tuna steak for 30 second to a minute on all sides, depending on how rare you like it!.!.!.should be eaten charred on the outside but pretty rare inside!.!.!.enjoy!Www@FoodAQ@Com

generously sprinkle blackened seasoning or old bay on both sides!. Wait about 20-30 minutes and grill or sear in a pan with a little pam or a dash of olive oil!.

Marinate for at least 30 minutes in a mixture of lime juice from about 2 limes, 1/2 cup of orange juice, dash of cayenne pepper, chopped garlic or you can use powdered!.!.!.to taste, chopped fresh ginger root!.!.!.or you can you powder but it's not as good, about a tsp of chopped cilantro, 2 tablespoons of dark sesame oil, 1/4 cup of lite soy sauce!.!.less salty and about 4 tablespoons of brown sugar!. Mix well, add fish!. cover and let sit in fridge!. I like to marinate it for about 2 hours but 30 minutes does work out ok!.Www@FoodAQ@Com

yummmm!.!.!.Tuna steak recipe :

Thick tuna steaks (4-6), use fresh
1 lg!. bottle Italian dressing
1/8 tsp!. salt (each steak)
Pepper each steak to taste

Place tuna steaks in 9 x 13 inch pan, cover steaks with Italian dressing, then put lid or saran wrap on pan and set in refrigerator to marinate overnight!. Place on grill to cook; done when tuna flakes when tested with fork!. Salt and pepper to taste!.

well definitely use very high heat and don't leave it on long!. you want it nice and pink on the inside!. as for a marinade, i like using orange juice with red pepper flakes, a dash of cayenne and some cilantro!. pretty simple!.Www@FoodAQ@Com
