*Quick Eggplant Parmesan
"This eggplant goes well with some steamed green beans and French or Italian bread!. Although the recipe calls for seasoned bread crumbs, you can use regular bread crumbs if you wish!. Adjust the amount of red pepper flakes according to your taste!."

1 egg
1 tablespoon water
1 small eggplant, cut into 3/4 inch thick slices
1 cup dried bread crumbs, seasoned
1 1/2 cups shredded mozzarella cheese
1/4 cup spaghetti sauce
1/4 teaspoon crushed red pepper flakes
3 tablespoons grated Parmesan cheese

In a small bowl beat the egg and water together!. Place the bread crumbs in shallow dish!. Dip eggplant slices in egg mixture then in crumbs, being sure to coat thoroughly!.
Heat oil in a large skillet over medium-high heat until hot!. Add eggplant slices and reduce heat to medium!. Cook for 3 to 4 minutes per side or until golden brown and tender!. Sprinkle mozzarella cheese over eggplant during last minute of cooking to melt!.
While eggplant is cooking, combine spaghetti sauce and pepper flakes in a microwave-safe measuring cup!. Cover with plastic wrap and cook at high power for 2 minutes or until heated through!.
Top eggplant with sauce and Parmesan cheese and serve!.

Grilled Vegetable Panini
1/4 cup olive oil
2 small Japanese eggplants or 1 medium to large regular eggplant, cut crosswise into 1/2-inch-thick slices
2 zucchini, cut crosswise into 1/2-inch-thick slices
1 small red onion, cut into 1/2-inch-thick slices
Salt and freshly ground black pepper
2 baguettes (each about 2 feet long)
1/2 cup Basil Pesto, recipe follows
8 ounces fresh water-packed mozzarella cheese, drained, sliced
2 tomatoes, sliced
1/2 cup roasted red peppers
8 large basil leaves, optional

Heat a grill pan over medium-high heat!. Drizzle the oil over the eggplant, zucchini, and onion slices, then sprinkle with salt and pepper!. Working in batches, grill the eggplant, zucchini, and onions until they are tender and grill marks appear, about 4 minutes per side!. Cool completely!.

Cut each baguette into 6 pieces!. Working with one baguette piece at a time, slice in half and spread both sides with the pesto!. Working with the bottom slice of the baguette, stack 2 slices of eggplant, 2 slices zucchini, 1 slice onion, 1 slice tomato, 1 slice mozzarella, and 1 slice of roasted pepper!. Sprinkle with salt and pepper!. Place top half of baguette on top and continue with remaining baguette!. (The sandwiches can be made 4 hours ahead!. Wrap well with plastic wrap and refrigerate!.)

Basil Pesto:

2 cups fresh basil leaves
1/4 cup toasted pine nuts
2 garlic cloves, peeled
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup (about) extra-virgin olive oil
1/2 cup grated Parmesan

In a blender, pulse the basil, pine nuts, garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper until finely chopped!. With the blender still running, gradually add enough oil to form a smooth and thick consistency!. Transfer the pesto to a medium bowl and stir in 1/2 cup of cheese!. Season the pesto with more salt and pepper, to taste!. (The pesto can be made 2 days ahead!. Cover and refrigerate!.)

Yield: 1 cup

First of all, don't panic!.

Then get these additional ingredients:

-1/2 cup tahini paste, preferably frashly made
- 1 tomato, diced
- 1 chili pepper, diced
- 1 onion, diced
- Juice from 1 lemon
- 2 tablespoons olive oil
- salt/pepper to taste

Heres what you should do:
- Cook the eggplant on the grill, until nice and crispy!.
- Meanwhile, dice the vegetables and mix together with lemon juice and olive oil
- When the eggplant is done, remove the skin from the top, lengthwise, leaving as much of the flesh as possible
- Spoon the tahini paste over the top, then the vegetable mixture, making a nice little hill!.
- Serve immediately

Easy way with eggplant! Slice it into 1cm steaks if the seeds are dark sprinkle a little salt between each slice and sit until juices run off, rince and pat dry well and in a very hot pan cook it on both sides until golden brown!. Or cube it, do the salt business if you have to and brown it slightly, add a can of chopped tomatoes, some garlic, some basil or oregano and bubble it away till tender, you can add any veg you like and serve the whole lot next to a cooked chicken breast or small steak or roll it through some cooked pasta, a little grated cheese and you are about to have an easy dinner!Www@FoodAQ@Com

Eggplant Rice dressing w/ meat!.
peel off the skin of 3 eggplant!.Cut into 2" squares
boil in pot of water with a little salt & pepper!.
When you can pierce the squares with a fork (soft texture) remove from heat pour off about 1/2 of the water and set aside!.In a 5 qt!.pot start browning 1lb!.of lean ground meat after good and brown pour out all drippings!.Then add a seasoning mix containing onions,celery,bell pepper !.When seasionings are soft add 1-can of cream of mushroom and 1-can of cream of onion soup stir to blend well then add the eggplant and remaining water that was set aside mix well!.While this is cooking on a med!.heat!.Cook 3 cups of rice
on the side!.After rice is cooked start adding it with a large serving spoon to the eggplant/meat mixture!.Add just enough rice that the total mixture will be moist when served!.You don't want it runny and you don't want it too dry!.This is a great side to compliment any meal!.(Mushroom pieces are optional in the early stages of mixture cooking)!.Www@FoodAQ@Com

Here's a gorgeous recipe to treat yourself!! Different and delicious and definitely impressive!

Here we go:(This recipe is for about 4 breasts,but you could adjust , depending on the quantity you need to cook or the size of the portions)

Pound breast a bit with a mallet(or a rolling pin!), to flatten!.
Cut each one in half!.
Dredge with flour!.
Keep aside!.

1 eggplant(aurbegine)Slice into thickish rounds and cook on oiled grill till golden!.

*I do it on my George Foreman grill but an ordinary skillet will also do or you could just pop them in to a hot oven after drizzling with some oil!.*

Chop an onion!.
Slice about 8 button mushrooms(white)

Heat 1 - 2 tablespoons of butter or oil

Add in 1 chopped onion,cook for 3 mins until just 'pink'!.

Add in 1 full teaspoon of black mustard seeds

Throw in the mushrooms along with 1 teaspoon of ground garlic!.
(If you feeling brave,you could put in 1 teaspoon of ground green chili or just leave it out!.)

Cook for a little while ,then throw in floured chicken breasts!.Add salt to taste and a grinding of black pepper!.
Cook till chicken is well coated with the other ingredients and LIGHTLY browned!.

Pour in 1 tub (250-300ml fresh cream) and mix till thickened a bit!.Turn off heat!.
Layer chicken with sauce , top with eggplant slices,repeat until all is used up!.Sprinkle cheese on top and put into a hot oven to melt cheese!.

Serve with a tossed salad and some home made chips!.

Cut eggplants in the middle, keep for 1/2 hour to loose bitter!.Hollow out the eggplants ( like boat)!. Slice onion , tomatoes and hollowed eggplants!. Fry onion and mince!. Make babaghanoush! It's sooo tasty!.

Bake your eggplant in the oven, until the skin is crispy and the insides are soft!. Then cool it a bit, and peel it!.
Mash the insides with a fork, and try to drain the liquid a bit!.

mm!.!. egg plant Parmesan!.!. my mom use to cut the eggplant into slices about 1/4 inch thick, dip the eggplant in egg, coat it with flour, fry it up, and make stacks of eggplant, marinara sauce and Parmesan cheese!. then after about four slices, she would top them off with mozzarella cheese, bake it until the cheese on top melted, and served it with a yummy salad!!
