INGREDIENTS & DIRECTIONS:

Mix together thoroughly:
1 box yellow cake mix
2 eggs
2 sticks melted butter
Pour into a (DEEP) lightly greased 9 x 13 baking pan

8oz!. package cream cheese
2 eggs
1 pound box sifted powdered sugar
Pour over cake mixture Bake at 350 degrees for 35 - 40 minutes until cake is golden brown!. Best to let cake cool thoroughly before indulging!.!.!.!.but good warm, too!.


CHOCOLATE ECLAIR CAKE
(NO BAKE)

INGREDIENTS:

1 large package Vanilla instant pudding
1 small package Vanilla instant pudding
3 1/2 cups milk
1 8oz!. container Cool Whip
1 box Honey Graham Crackers

DIRECTIONS:

1!.) Mix together and beat for 3 minutes on low speed, vanilla pudding and milk!.
2!.) Fold in Cool Whip!.
3!.) Line a 9 x 13 baking pan with 1 layer of graham crackers, pour 1/2 pudding mixture over crackers!.
4!.) Make a second layer of crackers and pour remaining pudding over crackers!.
5!.) Make a 3rd layer of crackers over pudding!.
6!.) Prepare Topping!.

Topping

Beat until smooth with mixer:

6 Tablespoons cocoa
2 Tablespoons cooking oil
2 Tablespoons softened margarine
1 teaspoon vanilla
2 teaspoons white Karo syrup
2 Tablespoons milk
1 1/2 cups sifted powdered sugar

Spread evenly over chilled cakes!. Refrigerate overnight before serving!.!.


STRAWBERRY CAKE
&
FROSTING

Mix:
1 white cake mix
1 box strawberry Jell-O (powder)
3 Tablespoons flour

ADD & mix thoroughly:
1 cup cooking oil
1/2 cup water

ADD:
4 eggs, one at a time
1/2 box frozen strawberries (thawed)

POUR:
Batter into 3 8” cake pans, bake for 25 minutes at 350 degrees, until toothpick inserted in center comes out clean!.

FROSTING

1/2 stick margarine, butter (melted)
3/4 lb!. powdered sugar (more or less if needed)
1/2 box of strawberries, mashed and drained!.

MIX:
Margarine, sugar, strawberries (and juice as needed) to spreading consistency to spread on cake!.


JELL-O CAKE
CAKE:
1 box yellow cake mix
1 large box Jell-o gelatin
12 oz!. Can soda pop
Bake cake as directed on box!.
Remove from oven, using a wooden spoon handle (or fork) poke holes in cake while still warm!.
Prepare Jell-o, using more soda pop in place of water!.
Pour Jell-o/soda mixture over cake!.
Refrigerate 2 hours!.

TOPPING:
8OZ!. CONTAINER Cool Whip
1 small pkg!. instant Jell-o pudding

Mix pudding, as directed and let stand 15 minutes until thick!. Blend
in Cool Whip spread over cake!.
Hint: I used Fago Red Pop (which is strawberry flavored) for the liquid in the cake mix!.!.!.and the liquid in the Jell-o!. also added a large box of strawberry Jell-o gelatin to the topping!.
Could decorate with sweet slices of strawberries!.



PINEAPPLE CAKE

INGREDIENTS:
1 box Duncan Hines Pineapple Supreme Cake Mix
1 large can crushed pineapple, drained, save juice
1 small box vanilla instant pudding
1 cup milk
1 8oz!. container Cool Whip

DIRECTIONS:
Prepare cake according to package directions!.
On removing cake from oven, immediately punch holes in cake!.!.pour pineapple juice over cake!. Let cool!.
Mix pudding & milk until thick!. Add remaining ingredients and spread over cake!.


Buttermilk Chocolate Cake & Icing
(Hubby’s mother’s recipe…not made it yet!.)

Sift together:
2 c!. flour
4 TBLS!. Cocoa
1 ? tsp!. Soda

Add:
2 c!. firmly packed brown sugar
3 heaping TBLS!. Butter
1 ? c!. buttermilk
1 tsp!. Vanilla

Bake:
In 2 – 8” cake pans at 350 degrees for 30 – 35 minutes, or until toothpick inserted in center comes out clean!.

Icing
1 box powdered sugar (sifted)
3 TBLS!. Cocoa
butter (size of a walnut)
1 TBLS!. Karo Syrup
coffee – enough to spreading consistency!.

(Sister-in-law said cake tends to sink, some, in middle when iced!.)

Mocha Frosting

1 tsp coffee crystals
1/4 cup milk or cream
1/4 cup cocoa powder
5 cups confectioners (powdered) sugar
6 tbs butter
1 1/2 tsp vanilla (imitation vanilla extract, in a bottle)

Blend everything until smooth!. Makes enough for one 13x9 cake!.

Royal Icing
3 ounces pasteurized egg whites
1 teaspoon vanilla extract
4 cups confectioners' sugar

In large bowl of stand mixer combine the egg whites and vanilla and beat until frothy!. Add confectioners' sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny!. Turn speed up to high and beat until mixture forms stiff, glossy peaks!. This should take approximately 5 to 7 minutes!. Add food coloring, if desired!. For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired!. If using storage bag, clip corner!. Store in airtight container in refrigerator for up to 3 days!.


Kreamy Kool-Aid Pie

1-(6 g) package un sweetened Kool-Aid powdered drink mix
1-(14 oz!.)can sweetened condensed milk
1-(8 oz)container Cool Whip frozen whipped topping, thawed!.
1-(9 inch) Graham Cracker Pie Crust (or Cookie crust)
Cool Whip for top (optional)

1!. In a medium bowl mix Kool-Aid and condensed milk, thoroughly!.
2!. Fold in Cool Whip!.
4!. If desired, spread more Cool Whip on top!.
5!. Chill for a minimum of 4 hours!.

I’ve used: Strawberry…Cherry…Lemon-lime (Key-Lime Pie)…!.Lemonade (Lemon Pie…might add some yellow food coloring for a more lemony look!.)

OATMEAL PIE

INGREDIENTS:
2/3 cup uncooked oatmeal
2/3 cup light Karo syrup
2 eggs, beaten
2/3 cup sugar
1 teaspoon vanilla
? cup melted margarine, cooled
1 – 9” unbaked pie shell

DIRECTIONS:

Preheat oven to 350 degrees!.
Mix all ingredients in order given!.
Pour into pie shell!.
Bake 1 hour or until knife inserted in center comes out clean!.

(I used Karo Brown Sugar Syrup and topped pie with pecan halves!. I made 2 pies the same day!. The one that sat over night was the better of the 2…(my opinion)!.


5 Minute Key Lime Pie

1/4 cup water
1 pkg!. (4 serving size) sugar-free lime flavor Jell-o (gelatin)
2 containers (6 oz!. each) fat-free (Weight Watcher’s) Key Lime Pie yogurt
1 8oz!. tub fat-free whipped topping
1 reduced-fat graham cracker pie crust

1!.) Heat water to boiling in microwave, whisk in gelatin!.
2!.) In large bowl combine gelatin & yogurt!.
3!.) Fold in whipped topping!.
4!.) Spread in pie crust!.
Refrigerate until set!.

Hershey’s Cocoa Cream Pie
(The best chocolate flavor I’ve found!)

? c!. Hershey’s cocoa
1 ? c!. sugar
1/3 c!. cornstarch
? tsp!. Salt
3 c!. milk
3 TBLS!. Butter or margarine
1 ? tsp vanilla
1 baked pie crust, cooled or a graham cracker crust

1!.) In medium saucepan, stir together until well-blended cocoa, sugar, cornstarch and salt!.
2!.) Gradually add milk to dry ingredients, stirring until smooth!.
3!.) Cook over medium heat stirring constantly until mixture boils!. Boil 1 minute, remove from heat!.
4!.) Remove from heat; stir in butter and vanilla!.
5!.) Pour into pie crust, cool!.
6!.) Top with meringue or cool whip!.

EASY CHOCOLATE PIE

Mix together, thoroughly:
1 can Eagle Brand condensed milk
1 small pkg!. Chocolate Fudge instant pudding

Add & mix together:
1 small tub of Cool Whip

Pour into a graham cracker crust pie shell - refrigerate!.

Serve with more Cool Whip (optional )

Variations: Use any flavor pudding you like!.



Ritzy (Mock) Apple Pie

The classic pie, featuring Ritz crackers baked in a golden crust,
is perfect for the holidays!.

Pastry for two-crust 9-inch pie
36 RITZ Crackers
1 3/4 cups water
2 cups sugar
2 teaspoons cream of tartar
2 tablespoons lemon juice
Grated peel of one lemon
2 tablespoons margarine or butter
1/2 teaspoon ground cinnamon


1!. Roll out half the pastry and line a 9-inch pie plate!. Place
crackers in prepared crust; set aside!.

2!. Heat water, sugar and cream of tartar to a boil in saucepan
over high heat; simmer for 15 minutes!. Add lemon juice and peel;
cool!.

3!. Pour syrup over crackers!. Dot with margarine or butter;
sprinkle with cinnamon!. Roll out remaining pastry; place over pie!.
Trim, seal and flute edges!. Slit top crust to allow steam to escape!.

4!. Bake at 425 F for 30 to 35 minutes or until crust is crisp
and golden!. Cool completely!.

ORANGE DELIGHT

INGREDIENTS:

1 small box vanilla pudding
1 small box tapioca pudding
1 small box orange jell-o
2 1/2 cups boiling water
1/2 cup orange juice
1 envelope Dream Whip, prepared
(or small container Cool Whip)
1 small can mandarin oranges (drained)

DIRECTIONS:

1!.) Thoroughly blend: vanilla pudding, tapioca pudding & jell-o!.
2!.) Combine dry ingredients with boiling water, cook to rapid boil, over medium heat, taking care not to scorch stirring constantly!.
3!.) Remove from heat and add orange juice, cool completely to room temperature!.
4!.) Fold in Dream Whip/Cool Whip and oranges!. Refrigerate until set!.

Variations:

SARA LEE TIRAMISU (easy)

Tiramisu - Another Ingredients
1 Sara lee pound cake 10 3/4 16 oz Non-dairy whipped topping;
1/4 c Strong-brewed coffee 1/2 c Sweetened cocoa powder
Instructions for Tiramisu - Another
Cut pound cake vertically into 10 equal-size slices!. Drizzle coffee over each slice; set aside!. In a large bowl, combine whipped topping and 1/4 cup cocoa, mixing until blended!. Place 5 cake slices on a flat surface!. Evenly spread a thick layer of whipped topping mixture over each slice!. Top each with a second cake slice, sandwich-style!. Transfer to individual dessert plates!. Spread each cake "sandwich" with whipped topping mixture!. Cut "sandwiches" diagonally in half!. Sprinkle with remaining cocoa; serve immediately!.Www@FoodAQ@Com

Here's a fairly easy recipe that is very tasty & pretty too:

Strawberry Trifle

1 Pkg Cake mix (yellow or white) – note: you only need 1 layer, so 9 oz mix works!
1 16 ounce package frozen strawberry halves, thawed
1 4 serving size package Vanilla pudding (prepared & chilled)
1 cup chilled whipping cream
? cup sugar

Bake cake in 9x9x2 pans as directed on package!. Cool!. (If you have used a 2 layer cake, reserve one for another use, or make another trifle!?) Cut cake into 8 pieces; split each piece horizontally!. Arrange half the pieces in a 2-quart glass serving bowl (or use a 9 cup Rubbermaid clear container), cutting the pieces to fit bowl!. Pour half the strawberries (with syrup) over cake, spread 1 cup of the pudding over the strawberries!. Repeat with remaining cake pieces, strawberries & pudding!. Cover and chill at least 4 hours!.

In chilled bowl, beat the cream & sugar until stiff (or just buy Cool Whip, instead), spread over trifle!. Sprinkle with some toasted almonds or garnish with some fresh strawberries, if desired!. Spoon into dessert dishes!. Makes 8 to 10 servings!.

Variation: Banana Trifle:
Substitute devils food cake for yellow!. Substitute 2 large bananas for the strawberries!. Blend ? cup milk into the prepared pudding!. You can garnish with halved cherries!

Note: Strawberries are in season now, so you could buy fresh, chop them & add some sugar & stir & let set for a bit!. Will be yummy!Www@FoodAQ@Com

This is one of my favorite summer dessert recipes - it will make good use of the fresh berries that are now appearing in grocery stores but you could also use thawed frozen berries if you like!. It's a very sweet cobbler topping, not like a biscuit, more like a soft, cake-like cookie!. Bring natural vanilla ice cream to top it off with!.

Buttermilk Berry Cobbler

1 cup sugar
1 cup flour
1 tsp baking powder
1 cup buttermilk
1 stick butter, melted
3 cups berries -- sliced (strawberries, blueberries, raspberries or any combination)
3/4 cup brown sugar
1 teaspoon cinnamon

Preheat oven to 375F!. Combine first four ingredients, set aside!.

In bowl, gently combine fruit, brown sugar and cinnamon!. Pour melted butter into 3 quart baking dish; spread fruit over melted butter!. Pour runny cobbler dough over fruit and bake at 375F 30-40 minutes or up to one hour!. Keep an eye to watch for burning - topping should turn golden brown on the edges!.

Serve warm with ice cream and keep leftover cobbler refrigerated!.Www@FoodAQ@Com

BAKED CHERRIES

3 cups sweet cherries
1 1/4 cups milk
4 eggs
1/2 cup sugar
1 teaspoon salt
1 1/2 tablespoon butter, melted
1 cup flour
1/4 cup confectioners' sugar

Preheat oven to 350°F!.
Wash cherries; remove stems and pits!.

Place pitted cherries in an 8 cup oven-proof dish!.

In the bowl of a food processor or blender, combine milk, eggs, sugar, salt, and melted butter!. Blend until smooth!. Add flour, blend briefly - do not overmix once flour is added!.

Pour batter into baking dish, covering cherries, and bake for 30 minutes or until top is light golden brown and center is done!.

Sift confectioners' sugar over the top and serve while still warm!.

This dessert can also be prepared using blueberries, plums, peaches, apples or other fruits that are in season!.


Serving Suggestions:

Top with whipped cream or scoops of vanilla ice cream!.

LEMON CHILLED DESSERT

1 can condensed milk - very cold
1 (3 oz!.) pkg!. lemon Jello dissolved in 1 pt!. of boiling water
1/2 lb!. crushed vanilla wafers
1/4 c!. lemon juice
2/3 c!. sugar

Whip condensed milk until like whipped cream!. Whip Jello mixture after it has been chilled until syrupy!. Fold together!. Beat in lemon juice and sugar!.
Place 1/2 of crushed vanilla wafers on bottom of 9 x 13 inch pan!. Pour mixture over the wafer crumbs and top with remaining crumbs!. Chill until firm!.

This makes an excellent luncheon dessert!. It is light and lemony!.

FRUIT GLAZED PIE

1 (3 oz!.) pkg!. Jello (lemon)
3 tbsp!. sugar
1 c!. boiling water
1 (11 oz!.) can mandarin orange sections
1 pkg!. Whip and Chill lemon dessert mix
1/2 tsp!. grated lemon rind
1 baked 9 inch pie shell, cooled

Dissolve Jello and sugar in boiling water - drain orange sections, measuring syrup and add water to syrup to make 1 cup!. Add to Jello - mix Whip and Chill according to package directions - set aside 1 cup Jello - add remaining Jello and rind to dessert mix!. Pour into pie shell!. Chill for 20 minutes!. Top with orange sections!. Spoon reserved Jello over pie!. Chill 3 hours or more!. Garnish with fresh mint!.Www@FoodAQ@Com

COOL and EASY PIE
INGREDIENTS
2/3 cup boiling water
1 (3 ounce) package strawberry flavored gelatin mix
1/2 cup cold water
1/2 cup ice
1 (8 ounce) container frozen whipped topping, thawed
1 (9 inch) prepared graham cracker crust
1 cup strawberries, hulled and sliced

DIRECTIONS
In large bowl, stir boiling water into gelatin at least 2 minutes until completely dissolved!. Mix cold water and ice to measure 3/4 cup!. Add to gelatin, stirring until slightly thickened!. Remove any remaining ice!.
Stir in whipped topping with wire whisk until smooth!. Refrigerate 15 to 20 minutes or until mixture is very thick and will mound!. Spoon filling into crust!. Refrigerate 4 hours or overnight!. Garnish with sliced strawberries before serving!.


Fancy Fruit Pizza

INGREDIENTS
1 (18 ounce) package refrigerated sugar cookie dough
1 (8 ounce) package cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla extract
2 medium firm bananas!. sliced
2 teaspoons lemon juice
1 (20 ounce) can pineapple chunks, drained
1 pint fresh strawberries, halved
2 kiwifruit, peeled and sliced
1 (11 ounce) can mandarin oranges, drained
1/3 cup orange marmalade
1 tablespoon water

DIRECTIONS
On a greased 14-in!. pizza pan, press cookie dough into a 12-in!. circle!. Bake at 375 degrees F for 10-12 minutes or until golden brown!. Cool completely on a wire rack!.
In a small mixing bowl, beat the cream cheese, sugar and vanilla until smooth!. Spread over crust!. Toss bananas with lemon juice!. Arrange the pineapple, strawberries, bananas, kiwi and oranges over cream cheese mixture!. Refrigerate for 1 hour!. Combine marmalade and water; drizzle over fruit!.Www@FoodAQ@Com

This is my daughter's favorite pie:

LEMONADE PIE
1 large container Cool Whip
1 (6 oz) can frozen lemonade concentrate, thawed & undiluted
1 can Eagle Brand sweetened, condensed milk
1 9" graham cracker crust (storebought is fine)
extra Cool Whip to dollop on top
Mix all ingredients together and pile into the crust!. Dollop extra Cool Whip around the edges, if you want!. Chill for at least 4 hours!.

You can also use Pink Lemonade or Limeade concentrate (tastes like Key Lime Pie)!. If you buy the graham cracker crust, there's a little plastic top that you can put over the top of the pie!.!.!.so it's easier to take it somewhere, and no dishes to bring home!! If you need more than 1 pie, make 2 different flavors:)Www@FoodAQ@Com
