Answers:
for a three layer cake you want a stiffer filling that will give your cake more stability!. You can fill it with gnache, a rich chocolate filling that stays creamy but will glue your layers together amazingly!.

Heat one cup whipping cream to almost boiling!.
Pour over a bag of ghiradelli milk chocolate chips in a glass bowl
stir until melted together, and let cool till just warm to the touch!.
Beat with an electric mixture until just fluffy, spread on layers!.
You can frost the outside of this cake with simple whipped cream, dusted with a little cocoa!. This cake will soooooooo wow them! good luck!.!.!.Www@FoodAQ@Com

When cooked, the layers tend to have a high spot!. Trim off this high spot so that the cakes are all very flat!. Use an icing or jam to put between layers!. Very fresh cake tends to break and crumble!. My niece who makes huge wedding cakes freezes the cake before assembling the layers!. This makes them stiff and easier to work with!.Www@FoodAQ@Com

choose the preferd filling,put a thin layer of filling on the cake and add a cake layer, repeat!.
