Usually a good gravy is made from the juices that come from the meat when you roast it!.
Take your pan drippings from after you have roasted your meat!. If its a small roasting pan you can just put some heat under it!. I will usually add a little extra broth to get all the good stuff that's stuck to bottom of the pan!. Heat that up on the stove until it comes to a little bit of a simmer!. Add a couple tablespoons of flour and cook the flour for a minute or so, add salt, pepper!. Then add more chicken broth or water!. When adding your liquid make sure you are stirring while you do this so you don't have lumps!. I usually use a whisk!. I prefer broth because the gravy tastes richer with broth than water!. Let it come to a small simmer until the gravy is thickened and serve!.Www@FoodAQ@Com
