Ingredients

2 pounds sour cherries, pitted
1 1/8 cups white sugar
3 1/2 tablespoons cornstarch
1 tablespoon butter
1/4 teaspoon almond extract


Directions

1!. In a saucepan, combine cherries, sugar and cornstarch!. Let sit for about 10 minutes!. Bring to a boil over medium heat, stirring constantly!. Lower the heat and simmer for 5 minutes or until the juices thicken and become translucent!. Remove from heat and stir in the butter and almond extract!. Whipped Ganache Filling:

2 cups heavy cream
1/2 pound bittersweet chocolate, finely chopped
1/2 pound semisweet chocolate, finely chopped
1/2 cup toffee bits

Bring heavy cream to a simmer in a small saucepan!. Place chocolate in a large bowl, pour heavy cream over and let sit for 1 minute!. Gently whisk until combined!.

Place the ganache over a bowl filled with ice water to chill slightly, whisking occasionally!. Remove ganache from the ice and whip with a whisk until light and fluffy!. Fold in the toffee bits!.


Sweet Vanilla Brown Filling

1 cup (2 sticks) butter
2 cups packed light brown sugar
1/4 cup milk
1 teaspoon pure vanilla extract

While cake is baking, in a saucepan, combine butter, brown sugar, and milk!. Cook and stir over medium heat for 3 to 5 minutes!. Remove from heat and stir in vanilla!.


Buttercream Icing

2 sticks butter, room temperature
2 cups Crisco shortening
1 teaspoon butter flavoring (Wilton’s)
1 teaspoon pure vanilla extract (Wilton’s)
1/2 teaspoon almond extract
2 pounds powdered (confectioners) cane sugar
1/2 teaspoon salt
1 tablespoon meringue powder
Water as necessary (I usually add about 2 tablespoons but you may need more or less depending on the humidity in your neighborhood)

In the mixer, mix butter, Crisco shortening, and salt together to incorporate, about 5 minutes on low!.

Add almond, butter and vanilla extracts!. Mix together well!. Add about 1 pound of powdered sugar and the meringue powder and mix!.

Add 1/2 cup of powdered sugar at a time and mix until you get the consistency you want!.

Add a little milk, a teaspoon at a time, if necessary to thin the frosting!. Blend well on low for several minutes!.

Canned cherry pie filling!. Then frosted with dark chocolate frosting, sprinkled with black walnuts!. I also like black walnuts in the cake mixture!.I think it may be called a Black forrest Cake!. Not sure!.But the cherry filling is my adaptation!.
