Question: Has anyone made potato salad with baked rather than boiled potatoes!?
I've never heard of it but I'm making a big batch tonight and wondered if baking the potatoes would be a good idea!. When I make it with boiled potatoes, I peel the potatoes after they're cooked!.Www@FoodAQ@Com

Yes, I have, many a times!. My Executive Chef would always have leftover Baked Potatoes from the previous nights serving and I took to using them for my Potato Salad the next day!. I peel them, diced them up and heated them in a saute pan with some onions and raw bacon!. Then, add what you like beyond that!. The Bacon Fat would rehydrate the potatoes and give it more flavor along with the sauteed onions!. What a Great way to use leftover, especially now with all of our summer parties and outside activities and BBQ'ing!.!.!.!.!.!.!.!.!.!.!.!.!.!.Potato Salad will not go to waste!Www@FoodAQ@Com

Baked Potato Salad

SERVES 20
Prep Time: 15 min
Cook Time: 1 hr
Ingredients

7 pounds baking potatoes
Extra-virgin olive oil, for brushing
2 pounds bacon, cut crosswise into 1-inch pieces
2 sticks (1/2 pound) butter, softened

2 pints sour cream
Salt and pepper
1 bunch scallions, thinly sliced
1 pound cheddar cheese, shredded


1!. Preheat the oven to 400°!. Pierce the potatoes with a fork; brush with oil!. Bake until tender, 1 hour!. Let cool, then cut into bite-size pieces!.
2!. In a skillet, cook the bacon until crisp, about 10 minutes!. Drain!.
3!. In a large bowl, combine the butter and sour cream; season with salt and pepper!. Stir in the potatoes, bacon, scallions and cheese!. Serve at room temperature!.

You can make potato salad with boiled, baked, fried, and mashed potatoes!! It all gives the salad a bit different texture, but all work just fine!.

All I had were shredded squares for hash browns, defrosted them and heated in the skillet and used them for potato salad one time!.

Oh, and Potato Salad isn't always chuncky and ice cold!. Sometimes it is smooth and hot!!!Www@FoodAQ@Com

Yes, I've done this and it works out fine - in fact, I actually like it better that way, but maybe I'm just weird! lol! I think it has more flavor this way - boiling the potatoes can really suck out the taste and nutrients! The first time I did it, it was because I just happened to have a number of baked potatoes leftover and I thought what the heck!?! I leave the skins on - gives it a more rustic look, and the skins are good for you, but if you'd rather, you can take the skins off!. You may never go back to boiled potatoes again!Www@FoodAQ@Com

In the summer when it is so hot I make my potato salad using the canned white potatoes!. They taste great and are real easy to use!. also the potatoes you are using, you can leave the jackets on instead of peeling them!.Www@FoodAQ@Com

As long as they weren't overcooked, and the right type they would be OK!. A baking potato is generally a floury potato, which gives you the fluffy texture!.Www@FoodAQ@Com
