How do you make a champgne cream sauce.?!

CHAMPAGNE SAUCE:
1/4 c!. chopped green onions
2 tbsp!. butter
1 c!. whipping cream
2 tbsp!. brandy
2 tsp!. cornstarch
1/3 c!. champagne
Salt and pepper to taste
In frying pan saute and onions in remaining butter!. Add cream and simmer 5 minutes!. Combine brandy and cornstarch, mix until smooth!. Stir in cream mixture!. Bring to boil, stir until thickened!. Season with salt and pepper!. Stir in champagne just before serving!.Www@FoodAQ@Com

WOw that sounds amazing!. Here's how you do it!. Take a couple tablespoons of oil and chopped shallots and put them in a saucepan!. Sautee, adding champagne in installments until it evaporates and the onion becomes translucent!. Add the garlic and sautee for a minute!. Sprinkle 1 tablespoon of flour over the onions and stir that in the pan for another minute, Add 150 ml of milk and 150 ml of cream, salt and white pepper!. Let the mixture come back to the boil and boil for 2 min!. Whisk well and add 1/2 cup more champagne just before serving!. If there are lumps or you want a smooth texture, strain through a sieve, but i often find that unessesary!.Www@FoodAQ@Com
