Broiled Halibut with Goat Cheese Crust
INGREDIENTS
6 ounces soft goat cheese
1 tablespoon lemon pepper
salt to taste
2 (6 ounce) halibut steaks
2 tablespoons butter
2 tablespoons lemon juice
1 tablespoon butter
5 tablespoons whipped cream cheese
1 tablespoon milk
1 tablespoon chopped fresh chives
DIRECTIONS
Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source!.
In a small bowl, stir together the goat cheese, lemon pepper and salt!. Pat this evenly over the tops of the halibut steaks!. Place the steaks on a baking sheet!. Pinch off tiny pieces of butter and place them on top of the cheese coating, using about 1 tablespoon per steak!.
Broil for 8 to 10 minutes per inch of thickness of your steaks!. You will know they are done when the cheese is browned and the fish can be flaked with a fork!.
While the fish is cooking, combine the remaining butter, lemon juice, cream cheese, milk and chives in a small saucepan!. Cook while stirring over low heat until everything is melted and smooth!. Spoon sauce onto dinner plates and place the halibut steaks on top to serve!.Www@FoodAQ@Com

do a good steak, get it heated up real nice (cook until your fav!. doneness) then crumble the goat cheese over top!. You can also do a fruit salad with goat cheese as well!. You can aslo do a bruschetta, or whatever it is, toasted french bread slices, with a little butter, garlic, and goat cheese with some slices of grape tomatos, for color!. Bake for about, let's say until edge of bread is nice and crispy and the cheese is nice and gooey!. Yumz!.

I roll it in herbes de provence and sprinkle with a sea salt and a little drizzle of olive oil and serve it with crackers or flat bread crisps!. I have also cut it into cubes, dip it in a little bit of egg wash, dredge in bread crumbs and give it a very quick toast in a hot pan for goat cheese croutons, they are awesome!.Www@FoodAQ@Com
