Roast like a turkey, use a roasting rack and a deep drip pan, I use to do duck in Chicago and would get a coffee can full of grease, they are very fatty birds!.!.!.!.!.!.!.!.!.Www@FoodAQ@Com
You could skin it first, most of the fat is in the skin!.
Or roast it really slow on a roasting rack so the fat drips away and the duck is held above all that fat!.Www@FoodAQ@Com

sear it on high heat on the stove, skin side down !.!.!.that will cook out a lot of the grease!.!.!.!. then slow cook it in a roasting pan in the oven !.!.!.!.and the grease will go to the bottom of the panWww@FoodAQ@Com
