It is pico de gallo which is spanish for roosters beak!. Pico is different than salsa in that pico is more chunky with little to no liquid and is used as a main ingrediant in dishes or an accompany to main dishes!.
I make Mango/Papaya Pico:
5-6 Roma tomatoes (sweeter and less acidic) chopped in small chunks
3-4 green onions chopped
1-2 Jalapeno's chopped in small chunks
1/4 cup Cilantro chopped finely
1 1/2 cloves fresh garlic minced
1 Mango or Papaya chopped in small chunks
Pinch of Salt
Pinch of Cumin
1 tablespoon lime or lemon juice
Put all ingrediants together in a bowl, mix thoroughly and cover!. Place in fridge until chilled!.
Some recipes call to add water, but allowing to sit in fridge allows ingrediants to merge and mingle and also allows for natural juices to flow!. Pico is not to be juicy like salsa!.
Serve on top of foods as decoration, serve as a side for dipping!.!.!.!.
Salsa's are more luiquid in nature and less vegetable as the ingredients are pureed or minced very finely!.
