Answers:
It depends on what the horseradish is going to be used for ~ (gee, I WONDER why it's called HORSEradish!?!?!?)

Getting on, if you're looking to make your own, I would grate and prepare it outside, or where there is plenty of ventilation!.!.!.!.!.the fumes that it releases are pretty noxious!.!.!.I have only made it once, it can be labor intensive, I just buy a good brand of prepared horseradish!.!.!.!.!.!.I don't have the time these days to prepare a lot of things, due to time constraints, but the peeling, grating, draining etc!. is a lot of work, unless you LOVE horseradish!.!.!.!.!.!.!.and are planning on using a lot of it in a particular dish!.!.!.!.!.Usually I just use it for prime rib, steak sandwiches and fresh cocktail sauce for shrimp/crustaceans!.!.!.!.!.!.Enjoy!!!

Peel it, then put it in the food processor with the grating blade, drizzle a little vinegar over it and put in an air tight container!. You can also do it in a blender if you want to!.

NOTE!!!! Get and extension cord and do this outside, the horesadish will burn your eyes like crazy if you do it inside!. It may still burn a little bit if you do it outside but not so bad!.

I think it is worth it!. I definitly use more of oi when I prepared it myself!.

You can also mix it wil some sourcream, and mayo for horse radish sauce!.Www@FoodAQ@Com

A little lemon juice or vinegar will keep your fresh grated horseradish form turning gray in presence of oxygen (air), A micro-plane (cheese)grater works great to grate it by hand!. It is well worth the effort to use fresh horseradish it is very different from prepared horseradish!.Www@FoodAQ@Com

We would make it every other year fom our backyard plants (those things survive everything!)!. We just grated it then put it in the food processoer for a few!. Its takes a min but you will get a fine shred to it! Yum! Enjoy! Its strong, btw, so be careful!Www@FoodAQ@Com
