What is the best fish to cook on the barby?!
I've tried cooking frozen sardines straight on the grill with one of those fish folding basket type thingy and they were great!. Any other suggestions!?Www@FoodAQ@Com

Not exactly fish!.!.!.but seafood!.!.!.shrimp on the barbie!!! Leave them in the shells (but clean & devein) & put them on skewers!. You'll want to marinate them first & then skewer & cook!. They just take a couple of minutes per side & they are THE BEST! Serve with some drawn butter!. Yum, yum!
You can do them same with fish too!.!.!.but the firmer types (like Halibut), marinate cut into hunks & skewer, etc!. Or scallops too!.
Sometimes, I do a trio of all three!.!.!.on different skewers, of course, as the cooking times vary!. Serve with potatoes (recipe below) & a salad, and maybe some bread!. A meal that is devine!
Potatoes Romano
White Rose Potatoes (at least one per person)
Vegetable Oil (about a tablespoon per 2 potatoes)
Butter (about same as oil)
Green onions (1 for every 2 potatoes), sliced
Grated Romano Cheese
Paprika
Cook potatoes, but do not peel (either boil them or microwave on Baked Potato setting)!. Mash the potatoes (including skins) and add oil & butter while mashing!. Fold in green onions!. Spread into an oiled flat pan!. Sprinkle with a little grated Romano cheese & paprika (& seasoned salt, if you like, but just a little bit!) Bake in a 350 degree oven for about 30 minutes!.

Grilled Jerk Rubbed Whole Fish with Hot Vinegar (Escovitch) Sauce
2 tablespoons ground coriander
2 tablespoons ground ginger
2 tablespoons light brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon kosher salt
1 tablespoon habanero powder
2 teaspoons coarsely ground black pepper
2 teaspoons dried thyme
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1 red snapper, scaled and gutted
Escovitch Sauce, recipe follows
Preheat the grill to medium-high!. Combine all of the spices in a medium bowl!. Set aside half of the spice rub in an airtight container for another use; store at room temperature for up to 6 months!.
Rub both sides of the fish with the remaining half of the spice rub!. Grill on both sides for about 4 to 5 minutes on each side, or until just cooked through!. Remove from the grill and immediately pour the Escovitch sauce over the fish and serve!.

1 Spanish onion, halved and thinly sliced
1/2 Scotch bonnet pepper, finely chopped
1 1/2 cups white wine vinegar
3 allspice berries
Combine all ingredients in a small saucepan!. Bring to a simmer over medium heat on the grates of the grill or on a burner!. Simmer for a couple minutes and then pour over the fish!.Www@FoodAQ@Com

tilapia is great on the bbq!.!.!.!.however, it is a delicate fish and will fall apart on the grill if you're not careful flipping it, or if you don't use one of those grill toppers!. i marinade my fish in italian dressing and old bay seasoning for 30 minutes before grilling it!.!.!.tastes delicious!!!!!Www@FoodAQ@Com
Swordfish is terrific on the grill, but it can dry out quickly so be careful not overcook!. I sometimes like to use a spice rub for it or even a store-bought spice mix for rimming cocktail glasses, such as for Bloody Marys or Bloody Caesars!.Www@FoodAQ@Com
I would definatley recommend mackeral for the barbie!. I havnt actually cooked it from raw before on there though!. I have warmed through pre-cooked smoked mackeral on the bbq and the extra bbq taste was beautiful!. Its well worth giving it a try!.Www@FoodAQ@Com
I think I would have to say Salmon!. Mainly because it seems to hold together the most for me!. But I have cooked Tilapia a few time and that tasted awesome on the grill!. It was tough to keep together though!.Www@FoodAQ@Com
