Cajun Chicken Fajita's in the Crockpot:
2 lbs boneless skinless chicken breasts, or combo of breasts and thighs
1 onion, thinly sliced
1 each red and green bell pepper, sliced
2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon salt
1/2 cup chicken broth
1 tablespoon fresh lime juice (or more)
flour tortillas
(Note from Kalyn: I recommend Carb Chopper or Mission Brand Low Carb Tortillas to serve with this!.)
grated cheese
sour cream
guacamole
lettuce and tomato
Cut chicken into 1 inch slices!. Place chicken in crockpot!. Top chicken with onion and peppers!. Squeeze lime juice over all!. In a small bowl, combine chili powder, cumin and salt!. Stir in broth!. Pour over chicken!. Cover and cook on low for 6-7 hours (3-4 hours on high) or until tender!. Spoon chicken into tortillas and serve with toppingsWww@FoodAQ@Com
