How long can ginger root last in the refrigerator?!


Question: How long can ginger root last in the refrigerator!?
I bought ginger root (about a two-inch, knobby little stem of it)!. I must have bought this 2 weeks ago!. I put it in the refrigerator!. I was going to use it in a recipe but I forgot I had it!. Is it still good!? It looks the same as when I bought it - no soft spots, it's not moldy or slimy!. I worry about food safety a lot though because I don't just cook for myself but for my little girl!.

So should I throw it out or should I just use it up as soon as I can!?

What signs do I look for that would indicate an "expired" ginger root!?Www@FoodAQ@Com

I just asked my wife and she says "about a month" so you have about two more weeks!.

It gets kind of dry and shriveled, sometimes moldy, when it gets old!. I have seen it get soft and rotten when stored with other things that are moist, but more often it just dries up!.

Some people from India that I know freeze it but they peel it and chop it up or put it through a food processor first!. My sister in law processes large amounts of ginger and garlic together and freezes them (they are often used together in the same dish)!. I never heard of anybody freezing ginger without peeling it first, but I guess you could if you wanted to!.Www@FoodAQ@Com

No they are good - it will not spoil so fast - it can last for months togethter - Only thing you wrap it a moisture paper which can absorb its moisture - keep it for few minutes in sunlight - and change paper and keep it in fresh paper - then it can last for mininim 2 to 3 months!.

HOW TO KNOW IT IS SPOILED AND WORTHY FOR USE !?

when the white fungus on any corner of the root comes , we have to discard it , but if proper care is exercised then it will last for quite long time!.

In Africa , in order to preserve it for longer time , it is being kept in wet soil upto the depgth of 1 ft to 2ft !. It gets more roots but it last for quite long time !. This is pure organic style of preserving natural ingredientsWww@FoodAQ@Com

I wouldn't worry too much about the 'dangerousness' of the ginger if it looks pretty much as you bought it!. If it was wet, slimy, smelly or dried up then I'd throw it away but otherwise use it up!. I haven't heard of anyone having ginger poisoning and you will be cooking it I expect!.Www@FoodAQ@Com

It will dry a bit, but that will only intensify the flavor!. I have kept ginger for two months, but then it usually gets moldy!. Best option - it freezes GREAT -- just wrap it in plastic!. When you thaw it, it's hard to tell it isn't fresh!.Www@FoodAQ@Com

I keep mine in the refrigerator in a simple syrup!. Have also kept it in white wine!. Lasts a long time!. It doesn't 'expire,' just shrivels up and becomes too hard to grate!. You can also wrap large pieces tightly in foil and freeze it!.Www@FoodAQ@Com
