Question: Does any one have the recipe for a food called lefsa!?
lefsa is a type of flast bread and you put sugar and butter in the middle!.!.!.!.not many people know of it that i know!. any help!?Www@FoodAQ@Com

INGREDIENTS
18 baking potatoes, scrubbed
1/2 cup heavy whipping cream
1/2 cup butter
1 tablespoon salt
1 tablespoon white sugar
4 cups all-purpose flour



DIRECTIONS
Peel potatoes and place them in a large pot with a large amount of water!. Bring water to a boil, and let the potatoes boil until soft!. Drain and mash well!.
In a large mixing bowl, combine 8 cups mashed potatoes, cream, butter, salt, and sugar!. Cover potatoes and refrigerate over night!.
Mix flour into the mashed potatoes and roll the mixture into balls about the size of tennis balls, or smaller depending on preference!. Keep balls of dough on plate in the refrigerator!.
Taking one ball out of the refrigerator at a time, roll dough balls out on a floured board!. To keep the dough from sticking while rolling it out, it helps to have a rolling pin with a cotton rolling pin covers!.
Fry the lefsa in a grill or in an iron skillet at very high heat!. If lefsa brown too much, turn the heat down!. After cooking each piece of lefsa place on a dishtowel!. Fold towel over lefsa to keep warm!. Stack lefsa on top of each other and keep covered to keep from drying out!.Www@FoodAQ@Com

Lefsa or lefse is a traditional Norwegian pastry!.
it can be soft and up to 1cm thick or thin and striped (krinalefse) (it is not so usual to use potatoes inthe sweet types)
here is the recipy of the soft type(first in norwegian)
1 dl smeltet sm?r (melted butter)
1 dl sukker (sugar)
1 dl lys sirup (light syrup)
1 1/2 dl kefir ( sour milk / kefir)
1 1/2 dl helmelk (whole milk)
2 egg (eggs :)
3 ss hornsalt (baking ammonia or a strange name; Salt of Hartshorn) baking powder can be used but you will loose the good basic-taste!.
Hvetemel til passe deig!. (wheatflour until the dough is right, wich means that it should be as sandcakedough!. it shall be baked out so it must be soft and not to hard)

Bland alle ingrediensene sammen, til en deig som er litt l?sere enn bolledeig!. Sett deigen i kj?leskapet over natten!.
Del s? deigen i passe emner, og kjevle ut til runde leiver som er ca 1/2cm tykke!. Bruk rikelig med hvetemel, s? ikke deigen setter seg fast!.
(MIX IT ALL TO A SOFT DOUGH AND LEAVE IT TO REST IN THE FRIDGE 4C!. BAKE IT OUT WITH A LOT OF FLOUR SO IT DOESNT STICK!.!. 1/2 CM THICK)

Stekes p? stekebrett med bakepapir, 200grader i 3-5 minutter, til leivene har f?tt en lekker gyllenbrun farge!.
(BAKE IN THE MIDDLE OF THE OVEN ON BAKING PAPERED PLATES!. 200 CELSIUS 3-5 MINUTES
THE COLOUR SHOULD BE DELICIOUS LIGHT BROWN)
La leivene avkj?les, f?r du har p? en blanding av sm?r, sukker og kanel!. Del leiven i to, og legg halvpartene opp? hverandre, med smurningen inn mot midten!.
LEAVE TO COOL AND SPREAD SOFT BUTTER WITH SUGAR AND CINNAMON ONTO THE LEFSE!. CUT IN HALF AND FOLD IN THE BUTTER, CUT IN CAKE PIECES AND ENJOY THEM WITH COLD MILK OR COFFEE!.

Ingredients:
1 1/2 cup boiling water
2 tablespoons butter
1/2 teaspoon salt
1 cup rye flour
1 cup all-purpose flour
1 cup whole wheat flour

Directions:

Preheat oven to 450 degrees!.

In a large bowl, combine water, butter, salt, rye flour and all-purpose flour and beat well!. Stir in whole wheat flour and beat until you have a smooth dough that resembles dough for a baking powder biscuit!. Divide dough into quarters!. Cut each portion into quarters!.

Flour a board and roll each piece of dough to make a thin 10- to 12-inch circle!. If desired, use lefse rolling pin to make a pattern on the dough!. Place 2 or 3 dough circles on ungreased baking sheet!.

Bake in preheated oven 3 to 5 minutes--NOT until completely browned!.

Cool on a rack!. Wrap airtight!.

Lefse- (It's Lefse, not Lefsa)!. ^_^

Ingredients:

* 3 cups mashed potatoes (cold & no liquids added)
* 3 tablespoons whipping cream
* 2 tablespoons oil
* 1 teaspoon salt
* 2 teaspoons sugar
* 1 cup flour (scant)

Directions:

1!. Mix all ingredients together and knead well!.

2!. Roll into long rolls, cut into 12 pieces!.

3!. Roll out on a floured board (using as little flour as possible) about the size of a dinner plate!.

4!. Bake on a hot grill, turning before lefse sticks and when brown spot and bubbles appear!.
