INGREDIENTS
* 1 tablespoon chopped onion
* 1/4 cup butter
* 3 cups fresh bread crumbs
* 2 cups chopped apples
* 1/4 cup chopped celery
* 2 teaspoons chopped fresh parsley
* 1/4 teaspoon salt
* 6 (1 1/4 inch) thick pork chops
* salt and pepper to taste
* 1 tablespoon vegetable oil
DIRECTIONS
1!. Preheat oven to 350 degrees F (175 degrees C)!.
2!. In a large skillet saute onion in butter or margarine until tender!. Remove from heat!. Add the bread crumbs, apples, celery, parsley and salt!. Mix all together!. Cut a large pocket in the side of each pork chop; season inside and out with salt and pepper to taste!. Spoon apple mixture loosely into pockets!.

1 cup sugar
1 tablespoon whole black peppercorns
1 large mango, peeled and pureed
4 pork chops, about 5 ounces each
Olive oil
Salt, to taste
MANGO-BLACK BEAN-GREEN ONION SALSA:
2 mangoes, peeled and coarsely chopped
1 cup cooked black beans, or canned beans, rinsed and drained
2 green onions, finely sliced
1 tablespoon serrano pepper, seeded and finely diced
1/4 cup fresh lime juice
2 tablespoons olive oil
2 tablespoons honey
1/4 cup chopped cilantro
Salt and freshly ground pepper, to taste
Place vinegar, sugar and peppercorns in saucepan and reduce until thickened!. Whisk in mango puree and cook 1 minute!. Strain into bowl!. Preheat grill!. This is a great method which gives an extraordinarily great taste!. First take the pieces of pork and put them into a frying pan with one stick of melted butter and fry the outside surface of pork chops about 4-5 minutes each side so the butter penetrates and cooks about 1/4" into the meat!. Then place the meat in a pan, and cover with aluminum foil and place into oven!. Add spices like paprika for better flavor and don't forget to sprinkle salt and pepper over the surface before cooking as well!. You can also first fry them like mentioned above and then place into a crock pot for more tender meat!. Pork chops taste really good baked with cream of mushroom soup and celery & onions!. Or baked with tomato sauce and you can also fry them with cracker meal baked with stuffing on top of them!. 1st brine them in water and salt--2 hrs--rinse, season flour with garlic/onion POWDER, I like sage,oregano, Italian seasoning!. If you want a thick batter, make a thin batter of beer/club soda, egg, and flour, dredge in flour, then batter, back to flour to coat!. Fry in pre-heated oil and brown both sides!. If you don't want batter just flour and fry!. Slice an onion, separate into rings!. At end of fry, add onions, heating until translucent--Gravy!?!? That's too big a question!. You can bread and fry them, barbecue them (like I'm doing tonight), bake them with a sweet and sour sauce, etc!.!. A big one here in the Baltimore area is to bake them in sauerkraut-- this is always a dish served at Thanksgiving here!.Www@FoodAQ@Com
