6 wooden sticks (Popsicle sticks)
8oz granulated sugar
4fl oz water
1oz butter
2 tbsp golden syrup
4 tbsp mixed nuts, finely chopped
1!. Push the wooden sticks halfway into the apples at the stalk end!.
2!. Put the sugar and water in a thick-bottomed pan and dissolve the sugar over a gentle heat!.
3!. Add the butter and syrup and bring to the boil!. Boil without stirring until the toffee reaches the soft-crack stage or 290C - measure this on the sugar thermometer!.

10 small to medium apples, washed and dried
4 cups (1 kg) sugar (white or brown)
8 oz (250g) butter
4 tbs white wine vinegar
4 tbs boiling water
1/2 teaspoon red food colouring
Mix the sugar, butter, vinegar and boiling water!. Make sure that you are using a saucepan that has a heavy base to prevent sticking!.
Add the food colouring!.
Cook over a low heat!.
Stir continuously until the sugar has all dissolved!.
Once the sugar has dissolved, boil the mixture for 10 minutes or until the mixture reaches a 'hard crack' stage!. Do not stir! If you have a candy thermometer, the temperature should read 150oC (302oF)!.
Test the toffee!. Drop a little bit of caramel into a bowl of water!. If it hardens immediately, it's ready!.
Remove from the heat and let the bubbles disappear!.
Pierce the apples through with the wooden skewers!. Push it through the top until it gets halfway inside the apple!. Check for a firm hold!.
Tilt the saucepan with the toffee mixture in it!. (Use some sort of wedge to free up your hands)!.
Dip the apple into the toffee and twist it around gently until the whole apple is coated in toffee!.
Remove the apple, allowing any excess drips to fall back into the saucepan!.
To harden the toffee, dip the covered apple immediately into ice cold water (throw in ice cubes if necessary)!.

My mum makes apples in batches of 6 and they're lovely!.
I think English cox's pippins are best but that's up to you!. you'll allso need 6 skewers or maybe some lolly sticks cut to a but of a point at one end, 225g demerara sugar, 110ml water, 2 tbsp golden syrup, 25g butter and about half a teaspoon of vinegar or lemon juice to help it set!.
1!. Dissolve the sugar in the water over a moderate heat!. When it has dissolved, stir in the vinegar, syrup and butter!. Bring to a boil and cook without stirring until it reaches hard-crack stage or hardens into a ball when dropped in a jug of cold water!. (if you have a food thermometer this is about 140C and it should take around 10 mins of boiling!.)
2!. While the syrup is cooking, pierce each apple with a one of your sticks!. Once the toffee is ready, dip each apple into the hot toffee, and make sure its fully coated!.
3!. Leave to harden on a lightly oiled tray or some grease proff paper!. wrap them in cellophane when they've completely cooled if you plan to keep them for a few days or just want to make them pretty!.
