Boom-chicka-woo-woo Chili

2 pounds ground beef chuck
1 pound bulk Italian sausage
3 (15 ounce) cans chili beans, drained
1 (15 ounce) can chili beans in spicy sauce
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 green chile peppers, seeded and chopped
1 tablespoon bacon bits
4 cubes beef bouillon
1/2 cup beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce (Tabasco)
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 (10!.5 ounce) bag corn chips such as Fritos?
1 (8 ounce) package shredded Cheddar cheese

Heat a large stock pot over medium-high heat!. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned!. Drain off excess grease!.
Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste!. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer!. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar!. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally!.
After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary!. The longer the chili simmers, the better it will taste!. Remove from heat and serve, or refrigerate, and serve the next day!.

2 onions, chopped
2 garlic cloves, crushed
1kg/2?lb lean minced beef
2 glasses red wine
2x400g cans chopped tomatoes
3 tbsp tomato purée
2 red chillies, thinly sliced, or 3-4 tsp dried chilli flakes
1 tsp ground cumin
1 tsp ground coriander
1 stick cinnamon
good shake of Worcestershire sauce
1 beef stock cube
salt and freshly ground black pepper
2x400g can red kidney beans, drained
1 large bunch coriander leaves, roughly chopped
wedges of lime, to serve



Method
1!. Heat the oil in a large, heavy-based saucepan and fry the onion and garlic until softened!. Increase the heat and add the mince, cooking quickly until browned and breaking down any chunks of meat with a wooden spoon!. Pour in the red wine and boil for 2-3 minutes!. While waiting, pour a glass for yourself!.
2!. Stir in the tinned tomatoes, tomato purée, fresh chilli or chilli flakes, cumin, ground coriander, cinnamon, and Worcestershire sauce and crumble in the stock cube!. Season well with salt and pepper!. Bring to a simmer, cover with a lid and cook over a gentle heat for about 50 minutes to 1 hour, stirring occasionally until the mixture is rich and thickened!. Add the kidney beans and fresh coriander!. Cook for a further 10 minutes, uncovered, before removing from the heat, adding any extra seasoning if necessary!.Www@FoodAQ@Com

3 1/2 tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 fresh hot chile peppers, seeded and chopped


Heat oil in a large saucepan over medium heat!. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender!.
Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth!. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt!. Stir in 2 cans of the beans and hot chile peppers!. Reduce heat to low, and simmer for 1 1/2 hours!.

Ingredients:

* 13 ounces lean ground beef
* 3/8 (46 fluid ounce) can tomato juice
* 3/8 (29 ounce) can tomato sauce
* 3/8 (15 ounce) can kidney beans, drained and rinsed
* 3/8 (15 ounce) can pinto beans, drained and rinsed
* 1/2 cup and 1 tablespoon and 2 teaspoons chopped onion
* 1 tablespoon and 1-3/4 teaspoons chopped green bell pepper
* 1/8 teaspoon ground cayenne pepper
* 1/4 teaspoon white sugar
* 1/4 teaspoon dried oregano
* 1/4 teaspoon ground black pepper
* 1/2 teaspoon salt
* 1/2 teaspoon ground cumin
* 1 tablespoon and 1-3/4 teaspoons chili powder

Directions:

1!. Place ground beef in a large, deep skillet!. Cook over medium-high heat until evenly brown!. Drain, and crumble!.

2!. In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder!. For those of you who don't like the meat in your chili, this is the chili recipe for you!. It's fast and easy to prepare!. Serve with shredded cheddar cheese and chopped scallions!.

Directions
In a large pot, add olive oil and warm over medium heat!. Add onion, peppers, and garlic!. Saute for 5 minutes or until softened!. Add beer and stir well!. Add tomatoes, black beans and kidney beans, stirring well to combine!. Add cumin, chili powder, hot sauce and salt!. Stir in refried beans to thicken chili!. Reduce heat to low and simmer for 15 minutes!.

White Bean Chili

1 pound dried navy beans
5 cups chicken stock
4 tablespoons (1/2 stick) butter
1 tablespoon minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chiles (fresh or canned)
1 pound boneless, skinless chicken breasts, finely chopped
1 tablespoon ground cumin
1 tablespoon dried oregano
1 to 2 teaspoons ground black pepper
1/2 teaspoon white pepper
Pinch red pepper flakes
1/2 bunch cilantro leaves, chopped

Rinse beans well, cover with cool water, and soak for 2 hours!. Drain!. Place beans in large pot with chicken stock and bring to a boil over high heat!. In a saucepan, heat butter over medium heat!. Add garlic, onion, and chiles and saute for 5 minutes!. Add chile mixture to pot with beans!. Add chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro!. INGREDIENTS
4 tablespoons vegetable oil, divided
2 onions, chopped
4 cloves garlic, minced
1 pound ground beef
3/4 pound spicy Italian sausage, casing removed

1 (12 fluid ounce) can or bottle dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
1/4 cup chili powder
1 tablespoon ground cumin
1/4 cup brown sugar
1 teaspoon dried oregano
1 teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
1 tablespoon wasabi paste
3 (15 ounce) cans kidney beans
2 Anaheim chile peppers, chopped
1 serrano pepper, chopped
1 habanero pepper, sliced

DIRECTIONS
Place 2 tablespoons of oil in a large pot and place the pot over medium heat!. Cook and stir the onions, garlic, beef and sausage until meats are browned!. Pour in the tomatoes, beer, coffee, tomato paste and broth!. Season with chili powder, cumin, sugar, oregano, cayenne, coriander, salt and wasabi!. Stir in one can of beans, bring to a boil, then reduce heat, cover and simmer!.
In a large skillet over medium heat, heat remaining oil!. Cook Anaheim, serrano and habanero peppers in oil until just tender, 5 to 10 minutes!. Stir into the pot and simmer 2 hours!.
Stir in remaining 2 cans of beans and cook 45 minutes more!.


And also a completely vegitarian recipe for chili:

INGREDIENTS
1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn


DIRECTIONS
Heat the olive oil in a large pot over medium heat!. Stir in the onion, and season with bay leaves, cumin, oregano, and salt!. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers!. When vegetables are heated through, mix in the vegetarian burger crumbles!. Reduce heat to low, cover pot, and simmer 5 minutes!.
Mix the tomatoes into the pot!. Season chili with chili powder and pepper!. Stir in the kidney beans, garbanzo beans, and black beans!. Bring to a boil, reduce heat to low, and simmer 45 minutes!. Stir in the corn, and continue cooking 5 minutes before serving!.

CASHEW CHILI

Ingredients:

2-3 cups kidney beans
4 medium onions
2 bell peppers
2 stalks celery
3 cloves garlic
1 tsp basil
1 tsp oregano
1 tblsp chili powder
1 tsp cumin
2 cans tomatoes
1/2 - 1 cup cashews
1 tsp salt
1/4 cup cider vinegar (this is really much more than is needed)
handful raisins
black pepper, bay leaf

Instructions:
-------------
Saute onions, bell peppers, celery, garlic!. Add spices, fry with onion
mix, stirring constantly!. Add tomatoes, pepper, bay leaf, cashews,
salt, raisins, wine!. Add beans, simmer covered for 30 min!. Add water
if necessary!. Add vinegar when chili is almost ready!. For variety, add
carrots or green beans (may need to cook longer until they are tender)!.Www@FoodAQ@Com

2 cans black beans with juice
1 can rotel
i diced onion, green pepper, red pepper
1 tablespoon each, cumin, garlic powder, onion powder
salt and pepper

1 taco seasoning packet if you want, about a cup of water or veggie broth

In a large pot heat oil and add veggies saute for 10 minutes!.!.!.add all the rest of first group of foods and boil, then turn to a simmer and cook stirring often checking to see if you need to add more broth or water!.!.!.!.cook for about an hour

It will get to a thick consistancy!.

Top chips with chili and grated jack cheese and optional green olives and onion stips and avacado!.!.!.!.put into a preheated 500 degree oven and bake until cheese is melted and bubbly!.!.!.

1 small or 1/2 large green pepper diced
11# can diced tomatoes
1 1# can chili beans (Brooks Hot Chili beans are my favorite)
1 small can tomato paste
1/2 cup red wine
1 pkg chili seasoning mix
1 tblsp chili powder

Instructions:

Mix everything together in the crockpot and cook on low 6 or more hours!.
This is really good with some cheese stirred in just before serving and a
dab of sour cream on top!.
