Question: How do you make egg fried rice that tastes as good as the takeaway!?
Answers:
2 cups of mix vegetables
2 cups of cold steamed rice
3 tablespoon of dark mushroom soya sauce
2 tablespoon of sesame oil
2 eggs
salt and pepper to taste
3 strips of bacon chopped (optional)

In a frying pan, cook bacon until crispy and take bacon off
if you don't want bacon use cooking oil

In a stick free frying fan pour 4 table spoon of oil and fry scramble 2 eggs!. While frying chop the eggs with spatula!. When cooked, mix 2 cups of mix vegetables and stir for 3 minutes!. Mix 2 cups of rice and stir until the rice is a little dry then mix 2 tablespoon of soya sauce and sesame oil and mix thoroughly!.

The secret of the Chinese take out fried rice is the sesame oil!. You MUST have sesame oil for the fried rice to taste like take out!. The taste of sesame oil is the one that you taste in almost all the Chinese take out food!.Www@FoodAQ@Com

use cold cooked rice!.

cook a whisked up egg in a wok first stiring it so it forms a broken up omelette

remove the egg - add oil to the wok, heat till hot, add ricem stir around alot till coated (keep heat high), then add egg again and stir around!.

keep stirring till cooked and mixed through!.

add some salt if you like

never add SOY SAUCE when cooking in the wok (it burns)

you can also add some finely chopped onions after cooking the egg and before you add the rice OR add some chopped up spring onions right at the end!.Www@FoodAQ@Com

You can find lots of recipes online, but here are a few tips from experience!.

Make your rice beforehand and refrigerate it, it should be room temperature or colder!. I found that the more oil I use in my recipe the better it tastes, and the more it seems like take out!. When you break the egg into heated oil in your pan be sure to whisk it so it breaks up into chunks!.

The basic plan is make rice, cool it, heat oil, break egg in pan, whisk while it cooks, throw the rice in, maybe add more oil, add some soy sauce and whatever flavor you like (maybe ginger), throw in some cooked meat, and when everything is warm you are good to go!. Delicious!.

This one makes egg fried rice similar to something you'll find at a chain called Benihana:


Ingredients:

- 4 cups cooked converted or parboiled rice (1 cup uncooked)
- 1 cup frozen peas, thawed
- 2 tablespoons finely grated carrot
- 2 eggs, beated
- 1/2 cup diced onion (1/2 small onion)
- 1 1/2 tablespoons butter
- 2 tablespoons soy sauce
- salt
- pepper

Instructions:

1!. Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes)!. Pour rice into a large bowl to let it cool in refrigerator!.

2!. Scramble the eggs in a small pan over medium heat!. Separate the scrambled chunks of egg into small pea-size bits while cooking!.

3!. When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl!. Carefully toss all of the ingredients together!.

4!. Melt 1 1/2 tablespoon of butter in a large frying pan over medium / high heat!.

5!. When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper!. Cook rice for 6-8 minutes over heat, stirring often!.

Serves 4!.

Tidbits: This fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce!. Keep this refrigerated until you are ready to fry it in the butter!. That's when you add the salt, pepper and remaining soy sauce!.

That is my favorite quick meal to make! Here's a recipe I threw together one day and now am addicted too! You can make variations with what ever vegetables you have on hand too!.

2 cups white rice (made before and refrigerated is best)
2 tsp!. vegetable oil
1/3 cup chopped onion (also good with green onion)
1/4 chopped celery
1/4 chopped carrot
2 tsp!. mirin (japanese cooking wine)
2 Tbs!. soy sauce
1/4 tsp!. sesame oil
1/3 cup chopped chicken/pork/tofu
2 eggs

saute vegetables in oil on medium-high for 3-5 minutes until softened!.
Add rice, mirin,soy sauce, oil and meat on med!. low heat until heated through!. While heating rice, in separate pan, scrabble eggs!. Add eggs to rice and mix until well combined!. Serve!.
