Here is mine!. Simple and easy!.

Southern-Fried Chicken

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard

1!. Combine flour, salt and pepper in a paper or plastic bag!. Dip chicken in the buttermilk!. Shake one or two pieces of chicken in bag to coat!.

2!. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees!. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right!. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes!. Drain on paler towels!.

You might want to serve it with some mac&cheese or mashed potatoes and gravy, fried Okra or greens and corn bread!. Dessert, sweet potato pie!.

well what I do is wash my chicken in salt water first to get all that yucky stuff off of it!.

Fried Chicken Recipe:
1 4-5 lb!. whole chicken
3 cups of flour (all purpose)
salt and pepper
cayenne pepper
garlic powder
knorr chicken seasoning

Mix flour and seasoning in a plastic bag!. Preheat a large cast iron skillet with peanut oil to 350-375 degrees!. Peanut oil is really good cause it has a higher smoke content!.

Put your chicken into the plastic bag with the flour and seasonings!. Check your oil to make sure it's hot and to the right temperature!. Shake chicken and make sure every piece is coated with the flour!.

Lay each piece into the skillet and let fry on one side about 5 minutes until golden brown!. Turn chicken over and let brown on the other side for 5 minutes until golden brown or juices run clear!.

Take chicken out of the pan and let drain on a plate with paper towels!. Preheat oven to 300 degrees!. Take chicken off the plate and place chicken on a rack with a pan under it to catch the excess oil!. Put chicken in oven for 20-25 minutes!.

Take out and put each piece on a serving platter!. Serve and enjoy!.Www@FoodAQ@Com

honestly -the best has been made with good ol pork-(lard ) renderring's ,nothing tastes better than that ! i'm sure ,some unreviled recipes ,have this very secret ingridient !?!? try some !.bet you'll love a good heart-clog !!!
