It's in case one doesn't separate properly and you end up with a broken yolk in your egg whites, which could totally ruin all the egg whites if they're going to be whipped!. (egg whites won't whip if there's any yolk in them!)
It also makes it easier to see if a piece of shell gets into your whites!.Www@FoodAQ@Com

Sometimes the yolk of the egg breaks when you crack the shell, mixing in with the white!. If you broke all the eggs over the same large bowl, egg number four might get yolk in the white of the (successfully seperated) first three!. also, it is a good habit to always break eggs seperately, small bowl into large bowl, in case there is something wrong with one of the eggs, you won't spoil the eggs already in the bowl!.Www@FoodAQ@Com

WE don't!. First of all if you crack them one ata time in a bowl then scoop then you should be scooping the yolk and moving that, not the white!.
A lot of people crack the egg and let the white run out into a bowl, transfer between each eggshell a couple fo times until all the white is gone, then dump the yolk in another bowl!.

You can also crack it into your hand and let the white run thru, or even use an egg seperator!.

I don't remember ever seperating my eggs that way, and I've been cooking since I was a little girl!.Www@FoodAQ@Com

I think people use a smaller bowl because it's a lot easier to pull shell out that way!. Some say that it's in case an egg is rotten, but I have never in my life come across a rogue rotten egg in a carton of eggs that was not past its "best by" date!.

also if you get some yolk in your egg white you will not transfer it to the rest of your separated whites!. Egg whites will not whip if there is a hint of yolk in them!.Www@FoodAQ@Com

we usually break the eggs over a separate bowl in case any of the eggs are off!. if you get any part of a rotten egg in your other ingredients, you have to toss them out!.

I don't!. I crack the shell in half, then let the white run out while keeping the intact yolk behind in half the shell!. I put the yolk in the other half of the shell a couple times to be sure all the white is out!.Www@FoodAQ@Com

I don't!.!.!.I break the egg keeping the yolk in one side or the other and let the whites fall into the bowl and toss out the yolks if I don't need them!.Www@FoodAQ@Com
