75 gm butter
100 gm icing sugar
75 ml honey
80 gm flour, plain
2 x egg whites
1/4 tsp ground ginger
Cream butter, add icing sugar and mix well!. Add flour, egg whites, honey and ginger and beat until smooth!.
Bake 4 wafers at a time!.
Spoon teaspoonfuls onto a greased oven tray, allowing room to spread!. Wafers will be about 10cm diameter when cooked!. Bake in a moderate oven (320F) for about 5 minutes or until golden brown!. Lift off gently with a knife and allow to cool!. Watch carefully while baking as wafers can burn easily!.
Store in an airtight container until required!.
Sandwich 4 wafers together with whipped cream and halved strawberries!. Dust top wafer with icing sugar!. Serve with strawberry coulis!.Www@FoodAQ@Com
