Does Anyone Know A Recipe For Sopapillas?!

This is an easy recipe courtesy of the Food Network (yes, I've made it, and it's great)

4 ounces unbleached all-purpose flour
1 1/2 ounces whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 tablespoon sugar
1 tablespoon lard or vegetable shortening
1/3 cup buttermilk
Canola oil
In a food processor, pulse together the flours, salt, baking powder, and sugar!. Add the lard or shortening and pulse to combine!. Add the buttermilk and pulse until a moist dough forms!. Transfer to a lightly floured work surface, and knead several times until it binds into a cohesive mass!. Cover with plastic wrap and let rest for at least 30 minutes!.
Pour oil to a depth of 4 inches into a heavy saucepan and heat to 375 degrees F!. Meanwhile, divide the dough in half!. On a lightly floured work surface, roll out half of the dough 1/8 to 1/4-inch thick!. Cut into 6 squares or triangles!. Drop 2 cutouts, 1 at a time, into the hot oil and fry, rolling them over, until golden, 40 to 50 seconds!. Drain on paper towels!. Repeat with the remaining dough!.
Serve at once on warmed plates with scoops of ice cream, cream anglais or dusted with powdered sugar or cinnamon sugar!.
If you REALLY want to get simple, you can also deep fry canned biscuit dough (think: Pillsbury Grands, cut into quarters and then proceed with the frying!.!.!.!.!.!.)

Makes 16 sopaipillas
Ingredients
1/4 cup plus 2 teaspoons sugar, divided
1/2 teaspoon ground cinnamon
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
2 tablespoons shortening
3/4 cup warm water
Vegetable oil for deep-frying
Honey
Combine 1/4 cup sugar and cinnamon in small bowl; set aside!. Combine remaining 2 teaspoons sugar, flour, salt and baking powder in large bowl!. Add shortening!. With fingers, pastry blender or 2 knives, rub or cut in shortening until mixture resembles fine crumbs!. Gradually add water; stir with fork until mixture forms dough!. Turn out onto lightly floured board; knead 2 minutes or until smooth!. Shape into a ball; cover with bowl and let rest 30 minutes!.
Divide dough into 4 equal portions; shape each into a ball!. Flatten each ball to form circle about 8 inches in diameter and 1/8 inch thick!. Cut each round into 4 wedges!.
Pour oil into electric skillet or deep heavy pan to depth of 1-1/2 inches!. Heat to 360°F!. Cook dough, 2 pieces at a time, 2 minutes or until puffed and golden brown, turning once during cooking!. Remove from oil with slotted spoon; drain on paper towels!. Sprinkle with cinnamon-sugar mixture!. Repeat with remaining sopaipillas!. Serve hot with honey!.Www@FoodAQ@Com

Roll dough about 1/4th inch thick on lightly floured board!. Cut into
rounds!.
Heat oil in electric skillet to 375 degrees!. Fry only a few pieces at a
time, turning once so they will puff up very easily!. Drain on paper towel
and keep warm in oven until all are cooked!. Serve with honey and sprinkle
with cinnamon!. The classic way to eat sopapillas is to make a slit and pour
honey into the cavity!. For very puffy sopapillas roll dough very thin, and
