Question: What should I make as a side dish for Arroz con Pollo (rice and chicken)!?
For Cinco De Mayo, I am going to make arroz con pollo, but I can't think of what to make as a side dish!. I was thinking salad!.!.!.but what kind!?Www@FoodAQ@Com

A good Mexican side dish is refried beans!.

As for salad!.!.!.!.!.there is a delicious Mexican salad made out of cactus (nopals)!. If you have not tasted cactus, it tastes like a sweet green bean!.!.!.I love it!. Here is the recipe:

To make a salad that will serve 4 to 6 toss together:

3 cups nopales
2 tablespoons crushed red pepper
1/3 cup chopped cilantro
1/3 cup thinly sliced scallions
1 cup crumbled queso fresco
2 tablespoons olive or vegetable oil (optional)
Squeeze of fresh lime juice (optional)

Well, the Arroz should be Amarillo Arroz Con Gandules (yellow rice with pigeon peas) since that is predominantly what we Hispanics eat with our meals!. And, the chicken, you can prepare it anyway!.

When I make my traditional arroz con pollo, I like to serve potato salad on the side!. It's pretty usual for a hispanic family!. At all of our gatherings, potato salad or macaroni salad is usually a must-have along side rice, chicken, and pernil (pork-shoulder)!.Www@FoodAQ@Com
