This is the BEST recipe!.!.!.one of my all time favorites!. (You can use pretty much any fish fillet, or if you're not into seafood, the sauce is great on steaks too!) Enjoy!. :)

Seared Tuna w/Soy Ginger Butter Sauce

INGREDIENTS:
3 shallots, minced
5 TBSP fresh minced fresh ginger
1 lemon, juiced
1/2 cup dry white wine
1/2 cup heavy cream
1/2 cup butter, chilled and cut into small cubes
3 TBSP soy sauce
salt & pepper to taste
2 TBSP sesame oil
6 (6 ounce) tuna fillets
fresh chopped cilantro (optional)

DIRECTIONS:
In a sauce pan over medium heat, combine shallots, ginger, lemon juice, and white wine!. Cook until liquid is reduced to approximately 1/4 cup!. Stir in heavy cream, and bring to light boil!. Reduce cream by half; do not burn!. Stir in soy sauce, then transfer to blender (or you can just use a hand blender)!. Blend on low while slowly adding butter, a few cubes at a time, until all of the butter is emulsified!. Season to taste with salt and pepper!. Keep sauce warm!.

Brush both sides of the fillets with oil and season with salt and white pepper!. Pan sear fish for about 2 minutes per side, or until done!. Be careful not to overcook!. Serve with ginger butter sauce and top with cilantro, if desired!.Www@FoodAQ@Com

As the first poster indicated, it goes well for a sweet /spicy glaze for fish!. I use it on salmon with a soy, ginger, garlic and honey glaze!.

If you have ever had a Japanese salad, the dressing they make is a ginger dressing!. I love it!.

I use it as part of many stir fries that I make!.

Sometimes I just cut slices and give a quick saute and then remove from the oil just to flavor the oil for the dish!.

If you have ever made pot stickers, ginger is in the sauce and sometimes in the filling!.

If you are ambitious, pickle it (like the pickled ginger served with sushi)

I make a poached pear dessert with the pears (whole and peeled) poached in a wine / simple syrup flavored with ginger and vanilla!. Serve them with ice creamWww@FoodAQ@Com

I freeze fresh ginger, then slice off the amount I need and use it in many recipes!. It's great in baked goods such as spice cookies and fruit breads, marinades for meat, jams and jellies, smoothies, stir fry or many asian recipes, and fresh ginger salad dressing is out of this world! It doesn't take much for most recipes, so one large finger or even a hand of ginger goes far!.Www@FoodAQ@Com
