Answers:
2 1/2 cups long grain white rice
5 cups water
3 tablespoons olive oil
4 tablespoons sofrito (jarred or make your own by dicing onion, bell pepper (any kind), garlic, cilantro and tomato)
2 tablespoons spanish olives
1 can green or dry pigeon peans, drained
1 envelope sazon with annato
2 bay leaves
1/2 teaspoon tomato paste
Adobo to taste

Add to the water, olive oil, sofrito, adobo!.!.!. use a little, because you can always add more salt then take out!.
After that has been done add the peas, the olives, the tomato paste, and including the envelope of sazon!. STIR!

Bring this up to a boil then stir in rice!.

Once it has began to boil again, lower heat and stir 1 more time, then cover!.

Let this cook for about 30 - 40 minutes on a low heat setting, stirring occasionally (every 10 minutes) until the rice is tender!. Serve!.Www@FoodAQ@Com

Puerto Rican Sofrito

Sofrito is the flavor base of many dishes!. It is highly personal and the source of many friendly disputes among cooks!. This sofrito is one of many from Puerto Rico!.

* 1/4 cup vegetable oil
* 1/2 pound green peppers, seeded and chopped
* 1/8 pound sweet chili peppers, seeded and chopped
* 1/2 pound onion, chopped
* 6 garlic cloves, chopped
* Leaves of 6 - 8 branches cilantro, chopped
* 1 tablespoon oregano
* 1/2 pound cooked ham
* 1/2 cup achiote lard or oil




Method

Put oil, peppers, chili, onion, garlic, cilantro and oregano in a food processor!. Pulse until crushed together enough to just blend!. Add the ham and pulse until all ingredients are well blended and form a paste!.

Put blended ingredients in a medium saucepan with achiote oil!. Bring to a boil!. When boiling, immediately lower heat to medium and cook at a healthy simmer for 15 minutes!. Stir frequently!.

Set mixture aside to cool!. When cooled, put into a non-reactive container and store in the refrigerator!.Www@FoodAQ@Com

Arroz Con Gondules and Sofrito Ingredients
1 cup Salted Pork or Hamsteak chopped 3 1/2 can (12 oz Water as required
1 medium Red bell pepper quartered 1 can (12 oz Pigeon Peas/Gondules not drained
1 large Green pepper quartered 3 can (12 oz Medium Grain Rice
2 bunches Cilantro stems removed 1 can (8 oz) Tomato sauce
2 teaspoons Salt 1 package Sazon
3 tblspoons Corn oil

Instructions for Arroz Con Gondules and Sofrito
Be Sure to Wash all Vegetables before hand

Sofrito:
You will need: 1 Blender, 1 medium sized Red Bell Pepper, 1 large Green Bell Pepper, 1 clove of garlic halved, 2 bunches of cilantro with the stems removed 1 teaspoon of salt, 1 tablespoon of oil and about a cup of water to your desire!.
Mix all ingredients in blender adding more or less to your desired taste!.
Blend until it looks like a sauce!.

Arroz Con Gondules:
You will need a large Pot or a Cast Iron Pot, Medium Grain Rice, 1 12 ounce can of Pigeon Peas also known as Gondules, 1 8 ounce can of tomato sauce, 1 cup of chopped salted pork or hamsteak, and 2 tablespoons of Corn Oil

Preperation:
Add 2 tablspoons of Corn oil to bottom of pot!. Cooking on Medium Heat!. Add Salted Pork or hamsteak, 1 Cooking Spoon/3 tablespoons of Sofrito and fry until browned!. Add Tomato Sauce, 1 package of Sazon and Pigeon Peas!. Use can left from Peas and add 3 cans full of water and 3 cans full of Medium Grain Rice!. Bring water to a boil, stirring ever 4-5 minutes!. Give one last thourough Stir, cover and let cook on low heat for 25 Minutes, stirring every 5-10 minutes!.

Rice is done when tender and dry!.Www@FoodAQ@Com

Start with a sofrito, add rice, sautee adding chicken stock until cooked, add frozen peas in final few minutes, cover and allow to warm through!. Serve!.Www@FoodAQ@Com
