Do any scots out there have a rice pudding recipe passed down to them from the turn of the century.?!
My nana who was from Banchory made one with currants that I loved as a child!. I've never found one to reproduce with the same taste!. could be my ingredients or technique!. any help or suggestions would make me very happy!.Www@FoodAQ@Com

I'm not Scottish, but I have a recipe from my husband's greatgrandmother!. I have to say it doesn't have currants, but there's nothing to stop you to add them, so here it goes, written exactly as she did:
Wash a couple of handfuls of rice thoroughly, and cook it in about one quart of milk sweetened to liking, the rind of a lemon, and a small piece of cinnamon!. Let the rice simmer until it has taken up all the milk!. Turn our into a basin and take out the cinnamon and lemon!. Stir in to it the yolks of 3 eggs, add some candied citron, and mix!. Butter a plain mould, put the pudding in and bake for half an hour or so in a quick oven!.
I hope you're lucky in your search, just one tip: I recommend you use Jersey milk for this, milk nowadays is not as creamy as it was in the past!.Www@FoodAQ@Com
