What is your recipe for deviled eggs?!

Here is my recipe for deviled eggs for when we have company over!. my girls love these and snag a few when they can!.!.lol!. WARNING these do have a kick to them
1 dozen hard boiled eggs: I heat the water til its boiling, add the eggs slowly boil for 5 mins, then shut off the heat and cover for another 10 mins!. I get the perfect boiled egg everytime!. Unless someone opens the lid to see whats going on" points spoon at my husband!.!.lol"
1 jalapeno deseeded and minced fine Optional
1 dozen eggs
1-2c mayonnaise
1/2 prepared mustard Ive even used Dijon mustard for added kick!.
1 dash pepper white pepper
Can use fresh chives for garnish, a sliced green olive, pimetto slice, a drop of Franks red hot sauce or your good standard Paprika
Directions
Cut eggs lengthwise into halves!. For smaller hands I some times cut in quarters and its a perfect bite for kids!.
Slip out yolks and mash well with a fork!.
Mix in remaining ingredients!.
Fill whites with yolk mixture, heaping it up lightly!.Www@FoodAQ@Com

Ingredients
1 dozen eggs
2 teaspoons dijon mustard
1/3 cup mayonnaise
1 Tbsp minced onion or shallot
1/4 teaspoon tabasco
Salt and pepper

Method
1 First hard boil the eggs!. (See how to make hard boiled eggs!.) Fill up a large saucepan half-way with water and gently add the eggs!. Cover the eggs with at least an inch of water!. Add a teaspoon of vinegar to the water (this will help contain egg whites from leaking out if any of the shells crack while cooking)!. Add a pinch of salt to the water!. Bring the water to a boil!. Cover, and remove from heat!. Let sit covered for 12-15 minutes!. Drain hot water from pan and run cold water over the eggs!. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells!.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool!.
2 Peel the eggs!. Using a sharp knife, slice each egg in half, lengthwise!. Gently remove the yolk halves and place in a small mixing bowl!. Arrange the egg white halves on a serving platter!.
3 Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper!. Spoon egg yolk mixture into the egg white halves!. Sprinkle with paprika!.

1 tbsp of mayo
2 tsp of dijon mustard
1 tsp of dried thyme
1 tsp of chopped chives
1 tsp each of salt and pepper
directions:
peel eggs and seperate yolks from whites and mix together all ingredients with yolks and fill eggs to desired fullness!.!.!.
i put the yolks in a food processor for easier chopping!.
top eggs with pimento slice and paprika or chopped chives if desired!.!.!. put in refridgerator for 2 hours covered or until chilled compeletly!.!.!.Www@FoodAQ@Com

I hard-boil, etc!. like all the other recipes, but add curry, light sour cream, Cajun salt/pepper mix, sometimes minced onions and/or a drop of yellow mustard to the mix!. Once I added sweet pickle relish to the above mix, but didn't like it as well!. If you like curry/Thai or Indian food, you may like this recipe!.Www@FoodAQ@Com
