Question: Can I use melted butter or do I have to wait til it cools!?
If a recipe calls for softened butter and I accidentally melt it in the microwave can I still use it or do I have to wait until it is !.!.!. un-melted!? (Ha! My brain is toast, what's the word!?!? Congealed!?)Www@FoodAQ@Com

By now it will have firmed up a bit so you can use it!. In the future you can not use melted butter to replace softened butter in all recipes!. In baked goods your product may turn out greasy rather than tender!. Cookies and pastry dough would be good examples of items where you can't use melted butter!.

You can still use it but don't add eggs to it or they will cook!. If your recipe calls for raw eggs then add something to cool it down first, like the sugar and flour - then test it with your finger to make sure it's not hot enough to give you scrambled eggs!.Www@FoodAQ@Com
