How do i cook a filet mignon?!
I do not like any part of my steak to be red, i like it all brown!. All thee cooking tips i receive, plus the obvious thickness of this cut of beef keep telling me that "done" is considered "medium rare" I prefer medium well to well done, with no "bloody meat"!. How would i go about getting the middle done, without burning the outside, and still keeping it tender!. The only way i can think of is to cut it long ways before cooking it!. that sucks to do that!. any other ideas!?Www@FoodAQ@Com

Here's the trick here!.
1) Buy (or cut) thin steaks (like 3/4 inch or less)!. If you try a traditional 1 1/2 inch steak, it won't come out good!.
2) Cook under high heat for just a few minutes per side
3) I recommend some sauce for this!. A well done Filet Mignon will be very dry unless sauced!. Alternatively, some sauteed mushrooms will do the trick too!.

If you are cooking a whole filet (instead of steaks)!. Saute in the stovetop until seared all of the way around (use a pan that is oven safe)!. Put the pan in the pre-heated oven and finish the filet in the oven!.
I would use a probe thermometer and cook the meat until it's the way you want (165 for well done)!. A probe thermometer sticks in the meat and connects to the actual thermometer that sits outside of the oven!. You can set it to beep when the desired temperature is reached!. Cook it slower and on medium heat!. For well done it should be cooked about 8 or 9 minutes on each side!.
Before cooking, if it was in the fridge let it sit out for about 20 minutes before grilling!.
After cooking let it sit for 15 minutes to "rest" then cut, this way the juices will distribute out and will be moist!Www@FoodAQ@Com

Sear it on the BBQ on both sides to get the pretty hatch marks
then bake till done

I always use a lid on my skillet to keep all the heat in and it cooks better !.Www@FoodAQ@Com
