Butter is a fat, and any fat acts as a shortening, which shortens the gluten strands in the dough!. Too much gluten development can make the finished product tough and too chewy!. Butter helps to keep the texture right!.

Butter also helps keep moisture in the dough!. A dough that has no butter (like italian bread) will stale much more quickly than a dough with butter!.

there is a french recipe called brioche that has the same amount of flour as butter!. it is very rich and tender!. butter/shortening/fat makes the protein chains shorter (that's why Crisco is called shortening) and therefor more tender!. so butter enriches and makes the bread softer!.Www@FoodAQ@Com
