Hi hon - try this one: it's quite simple to do and whenever I make it, it doesn't last for long! :o) xxx

Preheat your oven to gas mark 4/ 350F /180C!. You'll need a loaf tin (approx 3!.5/7!.5 inches) - lightly greased, and the base covered in baking paper (also lightly greased)

INGREDIENTS
3 oz (75g) Butter or very soft margerine
4 oz (110g) of caster sugar
1 large egg (beaten)
8 oz (225g) plain flour
2 level teaspoons baking powder
grated rind of 1 orange
grated rind of 1 lemon
4 medium ripe peeled bananas
2 oz (50g) Walnuts (roughly chopped - OPTIONAL)

TO BEGIN:
Place the margerine, sugar and the beaten egg in a large mixing bowl!. Sift in the flour and the baking powder!. In another large bowl, mash the bananas to a nice pulp!. Now use an electric mixer to whisk the sugar, fat and flour together until they are all combined!. (Don't worry if it looks a bit dry at this stage - it will be fine)!. Add the orange and lemon rinds and the bananas (you could add the nuts here if you wanted to) and give the mixture another whizz with your mixer!. Transfer the mixture to your cake pan and bake in the centre shelf of the oven for 50/55 minutes until the cake is golden, well risen and springy to the touch!. Leave to cool in the tin for 10 minutes, then transfer it to a wire cooling rack to finish off! ENJOY :o) xx Hope this helps! xxxWww@FoodAQ@Com
