Spaghetti sauce from (fresh) canned tomatoes?!


Question: Spaghetti sauce from (fresh) canned tomatoes!?
I canned my own tomatoes last fall!. Now I want to make spaghetti sauce from the canned tomatoes!. There are lots of recipes out there for canned tomatoes that you get from the store, but I haven't found a good one yet to make from tomatoes I canned myself!. Any recipes out there!?Www@FoodAQ@Com

we can our tomatoes too!. BETTER THAN STORE BOUGHT! What i do( I'm Italian) If want a meat sauce- I fry ground beef separately when all fat is soaked up can add fresh garlic to it and any seasonings you like!.( Oregano, basil, parsley, salt, red pepper, etc!.) Or you can make meatballs and add to sauce later!. I also add cooked sausage to my sauce to make it taste better!. YUMMY!! Then take it out of sauce when cooked and eat it when you eat your pasta!
I fry my onion and garlic in extra virgin olive oil with red pepper flakes! Then, I add my canned tomatoes to oil!. I usually make 4-5 jars because if you have left over you can freeze it and use it next time! I add fresh parsley, basil, oregano and salt to my sauce!. My mom always told me to add 1 tsp!. of sugar to take out the acidity from the tomatoes!. My sauce always comes out good!!!
Sometimes if I fry bacon, I save that oil from the bacon and save it!. I put it a container and put in refrigerator and then when I make my sauce, i use that bacon oil!. SOOO GOOOD!!!! TRY IT!Www@FoodAQ@Com

My basic marinara calls for a mira poix (minced onions, celery and carrot(i shred)) sauteed in olive oil to carmelize (4-5 mn) over med-high heat!. Move mira poix to sides and add in 1T concentrated tomato paste to hot spot in center of pan!. Stir tomato paste alone for about 1 min to allow to carmelize as well!. Add seasonings you like (oregano, basil, thyme, bay, red pepper, parsley, etc), I usually just add bay, a little thyme and a bit of honey (to sweeten/reduce acidity)!. Salt and pepper to taste (I like soy in sauces-adds fuller flavor) and 1 Qt of tomatos (hand crushed) bring to just boiling, reduce to simmer an cover!. Allow to cook 20 minutes stirring occasionally remove cover add a couple tablespoons of olive oil and a bit of parmesan cheese (if you like) and continue to simmer for another 10 minutes uncovered until very thick!.Www@FoodAQ@Com

Cook down your canned tomatoes, adding sugar, Italian seasoning, oregano, sage, peppers, chopped onions, fry burger, or whatever, add to sauce, if still thin, clarify with corn starch or flour!.Www@FoodAQ@Com
